Also, I'm not sure if this is a bug or not but when I go to craft the mailboxes and easel they are still blacked out even though I'm maxed at crafting

They are located:
%USERPROFILE%\AppData\LocalLow\Unwound Games\Echoes of the Plum Grove\saves
You can paste that into a run window (Windows + R) or past it into the top of a file explorer bar
