#Question about how to adjust variables as coffee ages

I typically buy two bags of the same coffee with similar roast dates. I feel like I usually can get a coffee I like quite a bit early in the first bag and can stick with that setting/getting a touch finer for the first part of the second bag.

The final 3/4 of the second bag usually I struggle to dial in and enjoy in the same way. When working with older coffees, what variables do you adjust first?

I typically dose 17g and go for 44ml at 200°F and shots end early twenties and I adjust grind size first, then volume, then temp when dialing in the first go around.

Appreciate any feedback!

Also, if it's helpful Im using a flair 58 and zerno with HU burrs
