Yup. 10g for standard. 12g for gentle. I have only tried 10-15g. Seems like the full range for sub-4-minute brews, since it is such low-agitation. Going coarser would not make a big impact you would think, since the flow rate is locked in.

The recipe we use here at H&S for coffee that's a bit darker roasted, more soluble, or that we simply want to enjoy and not think so much about.

I’ve been using 16:1 gabi gentle and I would describe it as muted compared to v60 and especially compared to ORB. Rounder and more sweet. Super smooth and mostly mindless which I like.

I get brown variance still. But it hasn’t been common. In terms of bag lottery, it’s been well within my risk tolerance. I don’t think the profile has gone noticeably lighter, because I’m mostly using the same brew profile with them as I did before. They pump out so many different bags that it’s just a different scaling situation. The Kenyan separations were a highlight of 2025 for me.

Yes, and brewer if you want to use the kettle with anything. My home setup is only the DE1, but I have the Filter 3.0 basket. I am sure @desert dawn will have a lot of gear too.

Would love too. That is a washed process offering from Gatugi Factory in Nyeri County, Kenya. It is primarily SL34. Roast level is oops too light. I was getting bright Citrus like grapefruit throughout, Black tea and Ginger or baking spice in the middle, and Orange soda on the finish after it cooled completely.

Gatugi Factory is a high altitude washing station. They are owned by the Othaya Farmers CoOp.

So kinda how it works in those countries is they have 1000s of small farmers who join farmer owned CoOps. Those associations setup washing stations throughout the region that these farmers sell their cherry to get paid upfront.

The processing stations wash, sort and create different lots based on what they think is best. Good CoOps keep track of what came from whom and can share profits from sale in the form of second payment to farmers whose cherry sold for more money.

Alma is great. The owner Harry Hutchins wife’s parent’s own Finca Terrerito and other farms in Honduras. Their coffee gets imported and stored at Alma and then sold all over to roasters. So you get access to very fresh coffee.

I have only tried their micro lots red honey, natural, and anaerobic. I would say those were all medium roast?

They are a super busy cafe.

Wooo! I love coffee cooled. I usually always do very small pours from the carafe to my cup so it rapidly cools

Lemon tartness might be the red berry. I find the red berry to be more raspberry some have said cranberry or pomegranate all which I associate to have a sourness

Cola starts mid temp for me and fully cooled but think flatter Coke like the molasses and flavor and kinda the sensation of the acidity

I just went to Belux and got this on a whim without trying it. Never had it before. I made it as an espresso with milk (I know, it’s a geisha, am I crazy???). Man, this coffee packs a really big rummy punch! Now I know why people like geishas so much. Most of what I tasted was rum and blackberry. If you like those notes, I’d definitely recommend it

I generally prefer light to medium naturals as an espresso with milk. Sometimes I’ll mix with some similarly roasted washed if it’s too intense.

I have a La Spaziale Mini Vivaldi II and just upgraded to an Option-O P80 grinder. I’m still trying to get used to the grinder. I’m coming from a 10 year old Baratza, so all my proportions are off with the P80. At first I thought the P80 was defective, but I am getting to realize that it just demands different ratios and proportions

I was about slightly less than a 1:1 ratio of espresso to milk with that geisha. There is no need to cut the flavor with more milk

@desert dawn used encanto gesha 13:200 in the gabi but did a wet RDT step after the bloom. It has some flavor now though thinking about how to taste this coffee more kekcry
