If we can't all come together for cheaper 1 cup specialty brewer filter papers to try against my other 1 cup specialty filter papers and the occasional 2 cup paper filters for Ethiopian so I can fit my whole brew to mitigate fines without adding another agitation pour to it then what can we come together for

I think the worst is my overall intake is not high. Maybe 2 cups/day but itās broken up into multiple tiny samples. Im just micro dosing all day

Yup. 10g for standard. 12g for gentle. I have only tried 10-15g. Seems like the full range for sub-4-minute brews, since it is such low-agitation. Going coarser would not make a big impact you would think, since the flow rate is locked in.

The recipe we use here at H&S for coffee that's a bit darker roasted, more soluble, or that we simply want to enjoy and not think so much about.
TLDW recipe:
12g dose, 200g water (1-16.7 ratio)

Iāve been using 16:1 gabi gentle and I would describe it as muted compared to v60 and especially compared to ORB. Rounder and more sweet. Super smooth and mostly mindless which I like.

A way to balance out low-agitation with a higher water ratio to still get efficient extraction without bitterness. He uses it on his birthday cake coffee too, which I found interesting. Flavor separation for days. I honestly don't go below 1/16.7 unless I am fighting undesired development/roast.

Looks like I went to 6-box in Dec 2024 so about right.

I get brown variance still. But it hasnāt been common. In terms of bag lottery, itās been well within my risk tolerance. I donāt think the profile has gone noticeably lighter, because Iām mostly using the same brew profile with them as I did before. They pump out so many different bags that itās just a different scaling situation. The Kenyan separations were a highlight of 2025 for me.
No danger notes/sweetness development on the SL9 sounds promising. So it might be time for me to revisit.
If you haven't tried thankfully in a bit, I think the sl9 would be good @vocal mesa + the burundi he just dropped

I road in one in Scottsdale as well years ago. The roads are nice, I think itās a combination of good planning and infrastructure with thoughtful design but also the highway didnāt seem to be terribly congested at that time.

if you are close to brookhaven, Avellinos has some really nice pizza and they use a wood fire oven instead of a deck ones. Also the owner loves wine so you'd actually see more wines being drink there than beer haha, though they only open for dinner

So with this water and a zp6 I couldnāt enjoy washed, only natural beans were okay, overall I struggled with flavor.

Would love too. That is a washed process offering from Gatugi Factory in Nyeri County, Kenya. It is primarily SL34. Roast level is oops too light. I was getting bright Citrus like grapefruit throughout, Black tea and Ginger or baking spice in the middle, and Orange soda on the finish after it cooled completely.
Gatugi Factory is a high altitude washing station. They are owned by the Othaya Farmers CoOp.
So kinda how it works in those countries is they have 1000s of small farmers who join farmer owned CoOps. Those associations setup washing stations throughout the region that these farmers sell their cherry to get paid upfront.
The processing stations wash, sort and create different lots based on what they think is best. Good CoOps keep track of what came from whom and can share profits from sale in the form of second payment to farmers whose cherry sold for more money.

My take away is that itās super easy to extract flavor from natural/processed beans and more difficult with washed. And more difficult to taste subtle flavor in coffee from very low tds water. I didnāt bring GH or KH measurements but dipstick had very little bicarbonate
I agree Naturals/Processed are more fruit bombs already. I was curious if you were finding more naturals bc I feel like (no proof) Asian and South American countries use natural process more

Gabi is basically a ratio 4 with one mid brew intervention.
I recommend it to everyone beginning pourover. Start there, learn what immersion brewing is, then they can try hybrid method to see if a switch might be worth it for percolation brewing.

I was freaking out when all four grinders didnāt have auto stop and one of the A4zs had the lock nut come loose as I was changing grind. But itās been no issue at all turning it off manually and the exchange was really easy (glad I tested before leaving)

The original is equal parts liquor 43 and espresso.
I do the modern version with an additional liquor. I find it less sweet. Equal parts:
-Espresso or concentrate
-liquor 43
-tequila or bourbon
I do a dry shake then add ice and shake again.

Alma is great. The owner Harry Hutchins wifeās parentās own Finca Terrerito and other farms in Honduras. Their coffee gets imported and stored at Alma and then sold all over to roasters. So you get access to very fresh coffee.
I have only tried their micro lots red honey, natural, and anaerobic. I would say those were all medium roast?
They are a super busy cafe.

If y'all haven't been to El Tesoro (either because you're fools living OTP or you're fools living under rocks), they've got a really solid bar program (unsure who/what put it together or if they're paying real bar people) and make a Carajillo with reposado. Real good despite not being a coffee place.
Oh and also it's easily top 2-3 mexican places not-located-along-buford-hwy-in-a-shack, which are always the best, obviously.

It was good. Iām dialing in the k ultra and I think I got the grind setting right. I think it was more balanced this brew compared to my A4z. Roast reminds me of prodigal so a bit more developed than Iām used to.

I had some processed coffees Percy was working on. Iām not sure if they were even on menu. He just brewed stuff he wanted thoughts on
12.5:200 at 90 C using the A5. After letting it cool a bit tastes really good, I would describe Lemon but grapefruit is more accurate.
Wooo! I love coffee cooled. I usually always do very small pours from the carafe to my cup so it rapidly cools
Lemon tartness might be the red berry. I find the red berry to be more raspberry some have said cranberry or pomegranate all which I associate to have a sourness
Cola starts mid temp for me and fully cooled but think flatter Coke like the molasses and flavor and kinda the sensation of the acidity

Trying to figure out use cases and I want to compare it to the K ultra. For now I'm mostly leaving it set for french press and then using for process focused coffee when the need arises. Planning to try it for espresso at some point.
I don't like changing these grinders much because it's easy to forget where you left off so right now A68 is set for espresso, A4z for filter or soup, and A5 for my wife's daily french press.
I agree. Iām not changing grinder as much, but dose a lot which is problematic too cause I goof on the recipes
For processed coffees Iām scared of I just grind at river rock setting and hope for the best
The new kettle is good for yeeting but not great for lower flow rates, has a tendency to dribble at 5 ml/s

This is on metal v60 with t90 which is usually really fast flow so Iām finer than regular v60
I used to brew at 1.4.8 until something changed about 3-4 months in
I soup at 0.0.4 or so. Depends on filters. Neither of the A4zs I've used are zero'd they both go a bit past 0. Same with both of the A5s and A68, I think that is on purpose.

This was a full on medium 2% WL above initial
Well 2% is still considered light by most but Iām giving you Bana standards

I just went to Belux and got this on a whim without trying it. Never had it before. I made it as an espresso with milk (I know, itās a geisha, am I crazy???). Man, this coffee packs a really big rummy punch! Now I know why people like geishas so much. Most of what I tasted was rum and blackberry. If you like those notes, Iād definitely recommend it

I generally prefer light to medium naturals as an espresso with milk. Sometimes Iāll mix with some similarly roasted washed if itās too intense.

Right on. I've debated swapping out my Lagom Mini (more or less same geometry as the A5) for an A68, haha. Not sure if it would be a noticeable step up.
I have a lagom mini Iām planning to sell. Replaced it with the A5.

I have v1 moonshine. I think the a5 is closer to k ultra but really havenāt done a lot of comparisons. I never really enjoyed the lagom mini
I have a La Spaziale Mini Vivaldi II and just upgraded to an Option-O P80 grinder. Iām still trying to get used to the grinder. Iām coming from a 10 year old Baratza, so all my proportions are off with the P80. At first I thought the P80 was defective, but I am getting to realize that it just demands different ratios and proportions
I was about slightly less than a 1:1 ratio of espresso to milk with that geisha. There is no need to cut the flavor with more milk
That sounds about right. Unless itās a darker roast I try to add the least amount of milk.
Randomly I get to try a Starbucks latest creation and even though I know itās dark roast I taste no coffee š¤·āāļø

Hehehe⦠Charbucks⦠but I agree. The lighter the roast, the airier the flavor, so less milk is actually preferable to taste the notes
I havenāt tried a step down basket yet. My portafilters are 53 mm as is, Iām used to them. At this point, Iām actually trying to reduce the number of variables I have to tweak, if I can. š

@desert dawn used encanto gesha 13:200 in the gabi but did a wet RDT step after the bloom. It has some flavor now though thinking about how to taste this coffee more

The first one we tasted was the shoebox mystery it was fine. Then we had OTL from scenery and I think itās like 8 or 9 weeks off roast
I honestly donāt know the answer, the only thing that has me curious is my Layo Teraga roast. I made the mistake of writing it off but around 12 weeks off roast it āstartedā to open up on the cupping table. But I couldnāt recreate that flavor in brewingā¦. Finally I just grinded way finer and bam favorite roast of mine so far

Havenāt tried them yet, soulmate seems pretty interesting

We only do spro in this cafe, and the coffee we currently serve from valor has this really distinct nutty note when made in a milk drink
