idk what a technical account rep would be for a "hardware" company like LM, but it either sounds like they're going to be making you try to sell service contracts or just manage service/repair at shops. Unless LM is trying to expand a service and training program in the US, which seems dubious given wider economics.
But also I am jaded by industry (and specifically american corporations), so don't mind me.

In 2008 I spent a month working in NYC and met up with one of my wife's friends from college. He was in mortgage backed securities and wanted to talk to us about changing his career. I think we convinced him to stay in finance

Graduated cylinder arrived. Previously using my $10 GH/KH kit I measured my water to be 53.7/35.8 but I knew that the truth was likely less than that since the resolution is 17.9 per drop
I will say I was on a kb90 last week trying to steam milkā¦. I donāt have commercial espresso machine experience. Boy will I need practice. The steam power is incredible
using 20mL of water in the graduated cylinder I came up with 35.8/22.4

Aiden + Ode gen 2 stock burrs
Goal: Can the stock Ode do UL well, and TDS limits 1.30s? 1.40s?
8.8g/150g. 80C bloom 1:3. 2x 92c pulses. Pulsar top in chamber
-Cup 1, WTH?? Unpleasant acidity, chemical, very under extracted. Grind 6.2
-Cup 2, Sweetness, better flavor, not enough. TDS only 1.17, Grind 6.0
92C bloom
-Cup 3, Complexity, grapefruit and spice middle with blk tea finish. Happy with this but feels like it needs to be pushed but a faint touch of dry. Probably just too small of a dose. TDS 1.32
UL: no complaints so far
TDS: Want to see 1.40s
8.8g is not easy on any brewer. Iāll try again later with higher dose and finer grind.
I did 12.5/209g brew this am at 88c and got the best cup so far. Acidity was more in balance and it was a really enjoyable cup
I used the df64 gen2 with those og2 burrs and found my cups to be a touch dry and unlike the zp6 where taste improves as it cools with the og2 astringency became more noticable as it cooled
Interesting... and the Aiden is also known for astringency since its so efficient
So 1:17ish but 88C. I have been slowly doing lower in temps and enjoying it
Exactly. I think lower temp on this roast specifically is good
Especially with an acid forward Kenyan. Was talking about this with Max at Shoebox for the Kamogogo roast because I was getting unpleasant acidity with those beans using his QC recipe. I actually think it ended up being more of a water issue, but his rec was to lower temp on Kenyans if acidity is too intense

With the adjustment I just made, I am between 1.7.6-1.8.0 for almost all shoey beans with v60 4 pour recipe. Usually hitting between 2:10-2:45
I'm not sure I never pushed my zp6 past 0 but then @gaunt gulch was able to get it to -0.5

Having had the zp6 for a little bit, I feel like it offers something different than the zp6
Feel like it had more body and complexity compared to the zp6 but doesnāt necessarily sacrifice clarity

Believe it or not, my wife prefers her K-cups. 
I believe it. I'm married and know there's a hard limit to how far you can push a partner's preferred routines and sometimes that limit is zero.
Though my wife can make a pretty mean pour over. I don't know what her recipe or technique is but as long as I didn't change the grind setting to something weird while experimenting, it's always tasty.
Yeah some of it is the routine. She works 2nd shift, I work 8-5. On weekends she does partake in specialty coffee if I can get up earlier than her. ššš

This was my wife till she stopped making coffee cause I was making hers. After many years the pods slowly left
Iām making my wife spiced coffee on the weekends with our French press and I think I converted her to soup during the work week.
The only problem area is when she has to get up early and wants to make it herself.
I really want a grind by weight grinder to solve this, but I canāt commit to running full bags
What about your dose tubes?
I donāt use them on the daily. Just for events or hosting people. If Iām going out of town Iāll prep them for my wife and set the grinder.

The Esmeralda was border line light/medium. which honestly Iām not mad at.
They do have darker stuff too. Ex: wife had a Rose latte where they took the time to craft their own syrup and other little nuances to bring out the flavor. They paired it with a darker espresso. The balance on the latte worked well
Double check hours. One location is the roasting facility and very limited hours
I respect them because they take the time to try and serve good products not just stuff for IG photos. Hopefully you meet the owner and can sit at the bar with him. Shorter Asian man

I went to a presentation. Lightly roasted coffee sales amount to less than 10% of coffee sales. Imagine UL is less than 1%
Many of the roasters there wanted to roast lighter, but it doesnāt sell. Then it showed that the light market is not brand loyal. They buy from everybody. A lot of them said they would end up having to put their fancy micro-lots into darker blends just to get rid of them. It was sad. You could see a little piece of the roasters die as they admitted all this
That makes a lot of sense honestly. Pretty niche

Yeah it was such a intentional presentation and really nice result but I kept wondering what a lighter roast and subsequent complimentary different Brew style
He even said that some people complain to him because his coffee is not roasted darkly enough for them
I think this is the main issue.
Dark roast people complain faster than light roast people. Lot changes or any minor change to their cup they notice immediately because they are very loyal to what they drink.
Oh the other thing in the presentation people expect to see the name consistent. They donāt want to see all the other info on the bags cause itās more confusing

I got a little bit of paper, but a stewed pears thing going on with a considerable clove/cardamom finish. Perfect flavor combo for the holidays.
I get earthiness initially with it as soup, which is probably what I mistook the paper (slight astringency) note for on V60. But those spices are singing. Felt like a dessert shot. Thank you @desert dawn.

That coffee is borderline OTL. So it does take a lot of finesse and hopefully will get better with time. I think thatās why some are getting slapped with things they are not used to

Keep Sey around for comfort roast. Try new roasters via Airworks.

Chinese food though, that I can give y'all a whole-ass list. I know the korean cuisine is all the rage and took over the zeitgeist, but don't sleep on ATL's chinese scene. I was on Gu's before they blew up and went and did the dumpling nonsense at Krog (trust, OG eggplant > dumplings any day of the week). That mans could cook some legit, actual-chinese-food-not-american-chinese-food. We've got real dope dim sum around there, too.

Tried to eat at Du Bu Gong Bang up there with my kids this past weekend but that place was packed with a long line. Must be good
Lot of folks like Royal China for dimsum, but Canton house is (again) mega-closer to my neck of the woods and is very simple and classic dim sum.
If you like Northern China, La Mei Zi is right there too, real good.
And of course always gonna stan Gu's ("Gu's Kitchen" now), but I do think it was better before they moved spots and opened multiple locations.
but truly, I think the further you get out towards/into Duluth, using the metric medikit just mentioned is best. Don't matter what the name is, if it's packed, go in, probably have a good time.
and I know the taco-spot paradigm also works going up buford ā find the most ramshackle spot you can where you can smell the food being cooked and you'll have bangin tacos (knowing a modicum of spanish is often a requirement in these cases)
best tacos I've had in Atlanta were a place my brother just pulled over at. Could not for the life of me tell you where/what/who exactly.
I think la mei zi still one of the best ITP even if itās not as good as it was a decade ago

Yeah since moving to ATL 2 years ago, the food has been a great surprise. I lived my whole life prior to that in Central FL in the shadow of Mickey Mouse, where chains were king. TGI Fridays, Olive Garden, Red Lobster, etc. Was the majority of the stuff. Here they are rare in comparison and I love it!
Tacos I recommend Buford hwy farmer market for convenience, el Rey del taco for chips/salsa and fresh tortillas carne asada flavor not quite it. My favorite nearby is in a gas station called lil kikos- what they do well is their salsa for using on the tacos-reminds me of the taco trucks we had back home
I like ginya izakaya in buckhead and shoya izakaya in doraville for traditional Japanese food

It's a slow drip cold brew maker. This picture is old and it's moved to my office admittedly

But it makes solid cold brew, slow drip. It just makes annoyingly small batches

They are well seasoned at this point, and I like the espresso it makes a lot.
The slow feeder does slow my workflow a bit. And makes a racket. But i found there was more variability of the shot time otherwise.

I don't know but it keeps changing. I don't like to use the term "end game". I don't think I believe in a perfect grinder anymore. There are a lot of grinders that I've wanted and now I'm glad I didn't buy them.
I am simultaneously annoyed and enthralled at how important a grinder can be. And I wonder how much of my grinder focus is also a lack of skill/experience to work around the grinder's presentation
I told myself I'd wait until I finished restoring my cremina. Then I'd have the flat max for espresso and update my df64 for pour over. But I'm still trying to educate myself on what I want in a soup grind/distribution and if it's more a pour over style grind then maybe I'd flip but again despite just needing to reassemble the cremina I'm a long way from being there apparently. And I still don't quite understand how a soup brews to make that decision yet

Yes. Not many have tried these. The Allground ProBrews come with their $1200 grinder but the design isn't great for single dosing so can't recommend. in #grinders a user noticed that the geometry was similar to pietro (2 sections instead of 4), this was back in July when Espresso Outlet had another sale
Labasura and big black cook had been posting about their experiences with their Shardors and both jumped on this burr and used sand paper while turning off the safety when their burrs came later that week
Neither had pietro but they preferred to UMV1. More recently ODD put these in a shardor and then a df64v and compared to an electrictrified pietro he built. He prefers these

DanielC tried to buy these but Espresso Outlet sent him the wrong burr (espresso), He is using a hand held 64mm ling long grinder. This is being fixed and apparently he is actually getting a 4 section grinder which should be more similar to pietro

After 3 years of tinkering, Iāve kinda found that I want to have a set up that consistently delivers a good cup of coffee with as minimal tinkering as possible lol. I feel like you can always be chasing a better cup of coffee, but Iāve finally settled at being okay with getting 80-90% optimal extraction / taste consistently with the A4Z. I will say, though, Iām excited to get the QAir for Christmas as a travel grinder + alternative heptagonal burr profile that will hopefully compliment the A4Z
And then just use all of my discretionary coffee money to buy coffee lol
I donāt chase good cups anymore. I drink more bad coffee now than ever. Iām constantly tasting all my kool aid. The good stuff I have to give to others

But on the flip side most shops donāt make much. Margins are small so most shops skimp
I think dialing in espresso is straight forward but for filter this was really tough. I ended up at 4.5 on zp6 and 6.5 on k ultra and I just kind of stayed there. For the most part I hadnāt found changing my grind setting to be that beneficial once I find what I like and mostly focus on grinder, brew temp, ratio, and v60 vs kalita wave.
Were you using the zp6 for espresso?
No, just soup/filter
Df64 gen2 was my primary grinder and then zp6 became main for filter
If you notice on the photo they spelled bourbon wrong so i was pronouncing it wrong
I like this one for espresso but very different than that radio roaster I tried in 23

I bought the ZP6 after the Niche to try the different flavor profile I was seeking. Boy did I struggle on PO. I was not active in EAF then - worked crazy hours 6-7 days a week. This is also when all the highly processed stuff was becoming popular but info was lacking to me causing more confusion.
After sometime I went to go visit Davy at Now and Then again. Turned out my cups were good. I was in my head about them not being perfect

Struggling this weekend with coffee. Bought lazy schnauzer profound adventure Yemen Haraaz and waited over 4 weeks off roast but tastes vegetal on v60 using maxwheel recipe. Not totally surprising because brew time less than 2 min. Went finer by - 0.1.3 on a4z but similar brew time and about the same. Will try on the ORB later

The 49. Even after updosing the 58/49 it still needed some adjustment for me
Initially the 58/49 15g dose was sharp acidity for me. When we did 58/49 16.5g dose the flavor improved but the finish was slightly harsh or as it cooled that same sharpness came out
MAYBE 58/49 had more clarity but not enough for me to pick it over just 49

I sometimes do a modified version of this. 2x High flow pours, 2x melodrip pours. I believe the 2nd high flow pour removes the need for wwdt.
Is that 4x post bloom pours?

1st pour/bloom high flow
2nd pour/bloom high flow
3rd pour/melodrip close to bed
4th pour/melodrip close to bed
If a coffee is still too fresh or I feel it needs agitation I donāt use the melodrip. Keep in mind I use the metal SS v60 it flows a lot faster so I have to grind finer where astringency can get tricky so the melodrip is a nice āoh sh!t handleā

The espresso wonāt matter as much if itās covered with 8-12 oz of milk and syrup. I canāt even taste espresso in a grande Starbucks (add name) latte.
However the milk texture may leave something to be desired?

This is an odd distinction, but I can't do a milk drink. That seems like it would be something to dilute a good coffee, but I can do a milk drink if there is an elevated flavored syrup and the whole thing seems like a crafted beverage.

Oh I forgot, we talked about this on Sunday in person, I'm lactose sensitive (bet you can guess why) so I have this initial reaction to milk (even if it's something like fairlife that I know won't affect me). So whenever I take a sip of straight milk drink (even if I make it or have it made with lactose free milk) I also get skeeved out. That has bled over into milk alternatives from to preferences now probably. But if something is a 'beverage' I can do it.
That makes a lot of sense to me. My son is allergic to peanuts and has been desensitized and any bit of peanut he hates, even if its candy. I can see how the post lactose symptoms would push you away from tasting milk.
I use 2% lactose free milk at home so the whole milk in shops are always a little surprising to me and not in a good way. I usually have better luck ordering cortados.
