So I already had a post with by bdb to dial in shots. Now I have the same issue with my flair 58. Either I have sour shots or drying bitter shots. The middle ground is really hard to find. I use medium to dark roast 1:2,2 ratio in about 33 sec. I don't know if my water is an issue, because it is more on the sour side. Temp 93° on the kettle, 2 temp setting on the flair for 10 minutes.

How much is your expectation
First thing I always bring up is: Are you sure its sour?
Bitter and sour often get conflated, so its good to really think about it from that angle. James Hoffman has a good video on the subject (bitter-sour confusion)
Second thing - How are you preheating the Flair? For the best temp stability, preheat with the PF locked in, and lever fuly raised.
Third - Do you know what a good shot with this coffee tastes like? I mean, have you had a good shot either on a different machine, or at the roastery? Having a frame of reference can help.
Fourth - from the photo, this looks fairly light, so a longer ratio could be helpful.
