All of the home roast I'm bringing to the meet is finished and resting. I took it a little more seriously this time and I roasted several dozen batches between profile development on older green, profiling these ones, and then the finalized roasts.

The Kamagogo I'm particularly proud of. Assuming it ages well, it is up there with some of my favorite coffees I've ever had let alone my own roasts. I managed to get the goldilocks perfect roast on it but only have 1 dialed in roast since I only ordered 1 pound of it. I might split it up into 6 15g samples rather than 3 30g so more people can try it.

The Kinini I had 2 different but good roasts of. One a hair darker than intended one a bit lighter but both good in their own way but that's why there is two different labels.

I might also bring a couple other one-off roasts of older green if they have anything good going for them.

On a side note, @limber stag do we have any more food plans this time?

My Wife can make some more baked goods again. It seems like we'll get a big turn out so she can make a couple dozen muffins or something like that. Maybe I can make a poll on flavors or something.

I think we mentioned possibly doing lunch or something too? Maybe people can pitch in and we can get something catered. Last time we went into the afternoon and all (at least me lol) left hungry and highly caffeinated lol.

Yeah I think it's taller and more shallow than the R24. Downside is it's easier to tip over a bit lol. It's not a worry since I removed the inner spring though.

I only have umv1 in there so that's a nice foil to the HU. I actually wouldn't mind comparing your Z1 with HU and the lagom casa for more trad espresso.

When my Z2 comes in I'll be using it for filter with ULF and the casa or Z1 with HU for milk drinks/boomer spro and selling the other.

So hype, a few of the QOL changes seem like they'll be nice maybe the burrs will be better who knows. Hard to improve on the Z1 though. The only issues there really were have been improved. I think some of the improvements are coming back into the Z1 at some point and will be able to retrofit.

That's ironic, I was just there on monday. My wife and I shared a cortado, americano, and a Golden Hour on pour-over. My wife really loved the coffees, especially the Golden Hour.
I've got mixed feelings, unsurprisingly. The Americano was a really really long ratio, i honestly dont think ive evered been served that large a americano before. The Golden Hour, which is a thermal shock was suprisingly muted(which is explained by the immersion), and the cortado was fine. One of the better coffee shop experiences I've had, but there is always that disappointment of how amazing those coffees would have been if I'd brewed them myself.

I don’t remember exactly what pour over I had (some sort of geisha) but it was a very different taste profile than what I drink at home/work so I don’t really know if it was “good” 😂😂 but I’ll be back for sure. It's a repeatability choice. The idea was to pair it with coffees that are fine around 19-21% extraction. Relatively coarse grind due to grinder constraints (Guatemala)

Where have you seen the aviary recipe? Empirical lists the mineral composition, https://empiricalwater.com/pages/mineral-composition. You won't get any calcium or chlorides from epsom salt and baking soda so I believe it has calcium chloride in it.

However, in the recipe page Arby talks about an Aviary hardness and buffer and lists several recipes. The mineral composition represents one recipe but I haven't seen where he disclosed how much hardness and buffer results in that recipe.

For glacial and spring he specifies the mineral composition are for the general coffee and tea recipes, but there's no similar note on the Aviary one.

This is the recipe for a gallon that creates the mineral composition he listed if that helps:

I've found Aviary to be pretty easy for me now. I have a 1L bottle I refill to 989.5ml (ish) then 10ml hardness .5ml buffer. I like that it's on demand where TWW is not.

My water is those two minerals and potassium chloride, I go 60/18.

I do 40 of GH from magnesium sulfate, and 20 GH from calcium chloride. 18 KH from potassium bicarb

Dilute one 5 gallon stick into a container with 500ml of zero/distilled water.

Then when you want to make water, fill an empty gallon container with one gallon of zero/distilled water, and then I dose 33mls from the concentrate into the gallon to get 1/3 strength third wave water. Or if you wanted full strength then do 100ml

I like that you dont really need to be that precise given the quantities and can just use a typical .1 grame scale rather than a drug dealer one where the AC current might affect your measurement etc

I used this site for making my water, and im loving the work flow and results. Super easy and I can make 2-3 1 gallon jugs in just a few minutes.

these days I start with a gentle bloom that's 3x the dose and waiting anywhere from 30 to 60s (closed switch, but sometimes do it open), then dividing the rest of the water volume into 3 or 4 more pours depending on the total volume/ratio. typically sticking to a 5 total pour structure (including the bloom in that count) but adapt as the brew proceeds. sometimes i find i need to reduce a pour and agitate more on the penultimate pour and employ a more "zen" approach as for when i do a pour (meaning less focused on time, more on where the water column is relative to the bed) - as the bed is ~0-2cm saturated, begin next pour. typically target 2:30-3:30
switch as v60, abacas, 60/20ish water - used to do a lot of coffee chronicler switch but have been doing a lot more trad v60 pour structure

I typically go for higher extraction brew methods and that allows me to back off temperature, grind ratio, etc to find balance rather than feel the need to push things. I feel like it's a more flexible.

However even my v60/bare kettle brews are not too far off intensity wise. I typically get similar extraction as with my sworks and melodrip but need a good bit of agitation to get there. It's a bit of a different profile though. Typically less clean of a finish (from the agitation maybe?) but thinner and Sharper up front.

If I had to guess the coarser + low agitation is what's getting you the light brews. I feel loke most people who grind really coarse are bigger into kettle agitation or have flow control/low bypass like pulsar.

I mess around so much it's hard to say but with my Pietro I often go coarse and brew with and without aggitation and just see which prefer, can get light cups out of it either way depending on the grind setting/ratio

That's cool, I'm not really familiar with the Peppina, I didn't know it had lower spring pressure.

That's what I noticed with the Strega/spring levers in general probably is they are very forgiving. Technically you could replicated with a direct lever too but that requires not having skillissue.

The 5 seconds vs 1 minute comparison I made was on the Strega. Can't say I've managed to salvage shots that were that far off with my Flair before.

The Bona Zuria roast I gave out at the meet is starting to open up.

I reccomend a moderately high extration as it's pretty dense. My brew right now has really strong lily and some jasmine and lots of jade oolong. With some more rest and or a shorter ratio the citrus should be more prominent.

Right or wrong, A LOT of the brews at the meetup were me :-).
V60-02, Cafec papers - Abaca, and we were using Aviary Empirical water.
I was brewing almost everything on the Ozik @500 burr gap,
A few of the brews were done with the EK W Titus Brew burrs/carrier which I usually leave around the same
I brewed like 7 different roasters coffees.
I was changing kettle temp based upon processing method and the expected level of roast from the particular roaster, but living in the 89-94 range.
I was not moving grind at all, this is my general approach to brewing when I am using a new grinder (which this one was for me)
I do a pretty standard 4-5 pour recipe and just respond to the brew to see if I can keep my TBT around 2:30-3:10.
Running slow - 4 pour and possibly pull out my drip assist
running fast - force fines migration to slow drawdown

This is the WL is for the coffees I brought. WL for a given roast level is very green dependant as most available moisture is lost during drying.

The sumava Gesha for instance is wildy high WL compared to my usual because it's a honey process with more moisture I'd guess and I've had the green a bit in a humid environment. The coffee itself though is pretty light.

The Francisco Giraldo on the other hand is a shade more soluble than I usually go for. Definitely would not call it dark by any means but needed a longer roast as it was a more sensitive coffee to burning and roasting unevenly.

Kenya AA always lose more moisture for me. Not sure why tbh but those are definitely pretty light. I think it may have to do with the bean size/structure and the way it interacts with heat more than moisture but idk.

And then of course super dry hard Washed ethiopian coffees end up with comically low WL. I've had great roasts of Getachew, Bona Zuria , and Layo Teraga all in the 7% range.

Yeah I've taken roasting more seriously than brewing or anything else coffee related.

It kinda scratches a technical/problem solving thing in my brain at the same time as the more artistic part or whatever. I have spreadsheets and dozens (100+?) Pages of notes lol. Hundreds of profiles with lots of iterations and I make a new profile for every individual roast often with paragraphs of research, justification references to previous coffees etc.

It's gotten fatiguing though I got worn out doing things to that extent with the dozens of roast required to practice and then profile the coffees I brought lol.

It's nice when I roast like once a week though spend an hour or two being super nerdy for 1 120g roast.

My wife has actually looked into this a few times for some other hobbies and from how it looks you definitely can sell coffee under cottage law. You just can't sold it brewed at a farmers market or wherever. You also can't sell wholesale to cafes.

And then there's nothing saying you can't ship so theoretically I could roast and ship coffee. It just needs to be under some amount of revenue per year and have a label saying it was produced under cottage law not in a certified kitchen.

I might sell my extra coffee at some point as an excuse to try more green who knows lmao. If I ever actually sold for real I'd need to do limited drops and stuff bc my real job has to take much higher priority and I wouldn't want to ruin my love of coffee by making it a source of income.

Looks like it was revised specifically in 2021 to allow online sales and other provisions and does specifically include roasted coffee as cotrage foods which don't need a licensed/inspected facility.

When I look it up half of the stuff that comes up is dated before 2021 though. It seems like there's a lot of uncertain information. Tbh if I had to guess it's not wildy enforced or anything, just gives a legal avenue to sell stuff people were probably selling anyways.

If someone did get questioned by any regulating authorities l about permits you then can show your cottage law compliance and you're good to go I assume.

Kamagogo was definitely light, I wish I had made it a bit more soluble as a normal 4 pour v60 did not work out as nicely as the high extraction sworks/melodrip thing I usually do. A little more juicyness to help those pink/red fruits pop probably would have been ideal.

Yeah the very floral/herbal think was fairly intentional as I really liked some of the H&S from early this year that was like that (la papaya mejo and gesha particularly).

However when I went to come up with a v60 recipe that would work with my coffee I couldn't dial it how I wanted lol. Reminded me of how a lot of people would say they struggle to dial H&S when I never had issues with it bc of my setup.

I'm hoping to find a nice balance now and have been working on an updated roast approach. I'd say it's a bit less green/fresh but in exchange more juicy, easier to brew and roast, and similarly light.

I did a fairly standard 1:17 @94c, Titus brew on EK @around 450 gap, V60 with cafec Abaca. Only change coffee to coffee was the Thankfully I brewed @ 93°.

I didn't find your coffee responded quite like some of the H&S I've had, need to be pushed to the extreme (1:18, 95°+, ECT). It rested a WHILE tho, so YMMV

I've found recent H&S to be a bit more soluble compared to early this year for the most part.

I'd say most of those coffees were pretty insoluble compared to most coffees with 5 minute roast times given the way I approached it but yeah it still should be a step down from most H&S in brewing ease.

Not sure where my current roasts land in that spectrum but I'm getting higher wait loss and bean expansion across the board. Still pretty bright too but presents a bit different. This Gesha came out very Exposure therapy like (too much actually, I want a bit more juicyness and less soft tea).

Highly recommend someone pick up the sworks dripper from Rusty if there's any need for a 1 cup flow control flat bottom.

I use mine every day as it's the perfect dripper for my brewing style.

Really just want to make sure that we don’t have an event where we are missing critical stuff.

Last time I think we had two kettles and it was more than enough, for the # of people present. Something that really makes the event nice, especially with so much caffeine is that folks brought food, which was a hit! Can’t go wrong there for sure.

Others brought grinders, a plethora of drippers, beans, water for brewing, etc.

I’ll be able to provide electricity and tables.

Any chance you have some pointers for someone who roasts coffee for himself to drink but not to sell? I'm struggling with my M2, I keep like over roasting, the artisan curves seem to look OK, there is no tipping, and it's not burned, but the coffee seems to be losing all the origin notes which were so easy to bring out with a fluid bed.

I'd love a tried and true roast profile for light roast I could load into artesian as a background, and use as a starting point for making light roasts that bring out the origin flavors. For smaller ~200-300g batches.

Hm...that's weird because I'm experiencing the opposite. I had a Roma Pro fluid bed, which has a heating element that seems a bit undersized (which I bet is responsible for this,) I was getting great 10-12 minute cinnamon roasts with that thing consistently, even if I finish in 8 minutes, my M2 roasts are comming out very "generic coffee" like.
