We just keep a solid preheat, I check my oven a laser thermometer and it’s usually 15 degrees off than what it says but I go 415 knowing it’s 400 for 45 and then turn it off and let them sit for 15 minutes. Not soft firm but mushable texture. I like the fat ones vs the skinnier ones they bake/roast more evenly.

If you properly sharpen the knife there should not be any burr left and the edge lasts very long depending on the angle and steel
Sg2 has good edge retention so it should last long

#

If you try using the rod on a hard steel with high retention and low toughness it will chip it

#

But ceramic rods can be used to deburr them. Since with harder steel burr is easier to take it off (you can imagine aluminum foil which soft and you can bend it back and forth many times, while something harder will snap quicker)

My early kitchen knives were extremely sharp, but had really bad cutting performance

They would shave hair without trouble, but struggle to cut through a carrot

Some amount of the loss of sharpness when putting a knife to brick is actual blunting of the edge of the secondary bevel

But some is rolling over of the edge, resulting in the side of the secondary bevel hitting the food instead of the tip

#

Honing steels (or their ceramic counterparts) can let you roll those back over to center if the bend in the bevel doesn't go too far back into the primary bevel of the knife

#

Rolling it back to center means that now the actual cutting edge of the knife is true again, and hitting the food first. Perceived sharpness is improved.

That’s kind of like asking why have a nice grinder or multiple brewers when I can just get a cheap French press or plastic funnel and brew coffee with.

Sure they both can get the job done and for someone who doesn’t know coffee might taste barely different. But to those of us who do it’s night and day.

I have cheap knives that I use a just a hone and cheap sharpener to get the job done for quick misc jobs. And I have two nice knives that will never see anything shy of a 1-5k grit stones an hour of elbow grease put in to them.

I make a cup of coffee for my dad and it’s gonna be minimal care even for a nice coffee. I make a cup of coffee for someone in this group and I’m gonna treat it like it’s fuckin surgery.

Personally I re read his statement and I’d still stick with mine. He did word it better in the sense that it will teach you the care you should have. As if it’s a sense of self discipline, in my honest opinion it teaches you to appreciate it more. In my expierence especially in this day and age there’s many fairly affordable knives that have Carbon steel edges, there also very ungodly expensive ones as well. But this is merely my opinion.

I have hereditary high cholesterol. I'm no MAHA, but the science just isn't there for dietary cholesterol affecting your numbers and heart health. A lot of medicine is still hanging on to old studies that haven't held up. Unless you're drinking gallons of it a week, don't think whole milk is going to do any harm. Overal saturated fat? Sure, there's some evidence still there. But unfiltered coffee (spro, etc.) prob has a bigger effect than milk.

Yes, this has been known for a while and is continually reinforced with new studies. (You can search EAF for "cafestol".) Paper filtering knocks it down to negligible. I believe this was the initial reason Rao came up with Filter 2/3.

You can pay more for auto injectors as well but it’s cheaper for vials and needles.
Getting in the protein while on it is much harder than it looks, maintaining muscle if you have it becomes a bit harder as well. So if you start definetely have a plan for protein and fiber and start working out with your body weight to not feel weak. Everyone reacts differently as well, some people don’t have stomache problems on them others do. Both my wife and I burp a lot on it and take additional stomache acid pills to balance it out.

Counter Culture (Silverlake) has one. It’s $200, but they are every month and they have lots of machines. New educator (Lena) is super nice and patient. Have considered taking it since other cheaper classes I’ve had were pretty bad. It is hard to learn at home if you don’t have a pro machine. ES1 milk has improved my game a lot from Breville. I suspect it’s more about repeating over with soap/food coloring (or in cafe) than instruction.

I think even ā€œgoodā€ technique only matters so much when the coffee itself is a huge variable. After trying lots of recipes, I’ve found that the 2x bloom + long wait + 1-pour method is most consistent and fastest drawdown. Or just join the soup cult and enjoy all the spare time.

seriously though my input would be:

  1. Level the coffee bed before bloom
  2. If you haven't already, watch this video: https://www.youtube.com/watch?v=nxmrSgwW25g
  3. Try to hit an exact number for your bloom it would aid in consistency. Having an exact number and trying to get within 5g of that will help in terms of consistency and troubleshooting rather than aiming for "2-3x" bloom. That's a ~20g difference you're brushing off.
  4. For this coffee you may be better off doing two pours to reduce agitation. 1 pour to hit that 60g bloom, then another long pour until you hit target weight. I have found amazing success using Lance's 1-2-1 framework with a 1:17 ratio and I also think it's because I also favor the high aromatic and pulled apart flavor notes. I only add more pours when I need more extraction say for an iced coffee brew or if it's a washed ultra light

I think you're just agitating too much. So either change your pouring technique via the suggestions in the video I linked or do only one pour after the bloom.

Today I fucked up and didn't zero out my scale before the bloom so I ended up accidentally doing a 3 pour recipe. My brew looked exactly like your video. The final ~25g took like a solid 1 min to drain.

Also Data S is like $4k after you add the scale and tablet. I find you are getting an objectively worse functioning machine with even less software perks. Data S can not connect to visiualizer nor is the community as vast as Decent. Plus, we don't know how these machines fare over time and with repairs so take that risk as it is.

All this interweaving into a complex yet beautiful tapestry of what it means to call oneself an Angelino, whether for a few days or permanently.

I thought that might be what you guys were referring to, personally it’s not a big deal in that factor, there are only 3 machines on the market that measure at the group so it becomes a bit of a moot point. For the software even decent had to start somewhere to be able to grow and market is growing for these type of machines. The delay from the sensor vs the group is only a .5-1.2 second which can make a some difference I won’t disagree there but it’s borderline splitting hairs at that. I’ve seen plenty of visulizer videos on it and it says so on the site and like every video I’ve watched. Everything looks like as live data as you can get for not measuring directly from grouphead.

MET is ideal and I’d love it but everyone having the issues right now have me a bit hesitant. 2.5k and has tablet and scale ain’t bad and they run sales on their websites from the looks of it.

But the bengle is definetely nice but I don’t feel it’s a 5k price point after taxes and shipping. Hell my prima doesn’t even feel like 5k price point new aside from aesthetics and steam power.

I’m gonna play with a wendougee this weekend at a friends place so I’ll report back on the pros and cons of actual usage. Maybe it hits maybe it misses, we’ll see.

If it were measuring pressure in the tank/boiler I’d agree entirely but it’s measuring at the outlet from my understanding to feed live info to the tablet. (Edited)

the measurements at the group yes are gonna be much more accurate and that’s what the decent does and excels at including reading the lack of pressure for data.
Saying delay is probably a piss poor way putting it but made sense in my head using that to describe the difference and that’s my bad.
I don’t doubt what the decent can do when measuring pressure at the puck but I also don’t think that saying the wendougee is not pressure profiler when it’s reading pressure directly at the outlet of the gear pump is accurate either.

Now I have no dog in this fight especially comparing the two side by side and owning neither and only ever having used a decent(yet). But I feel like given everything it can do it should still meet the criteria of pressure profiler just not as accurate/ efficient of one the decent.

You're good, it takes more than that for me to be bothered online haha.
From what I understand the Wendougee doesn't measure downstream of all flow restrictions, so it's not measuring the pressure the coffee experiences it is instead measuring the pressure that the flow restriction experiences. I only speak with a little caution as I haven't torn down the machine myself, but I've read such online and then confirmed with Lance whom I trust.
The two most immediate limitations is pressure based exits (especially on "pre infusion" (bad term but I digress)) and pressure limiting on flow profiling.

This is a bit unclear to me. Tesla seems insistent that they count it so long as the disengagement is within 4 seconds. But you have to take their word for it.
The recent cyber truck crash fElon blamed it on the driver disabling autopilot four seconds prior, kinda convenient timing.
Also fun fact, the cyber truck would take nearly 4 seconds to come to a complete stop, from the moment you start breaking

How long should it take to swap out a a boiler heating element on a single group machine. Knowing that’s exactly what’s wrong with it and all the panels are already off it.

So we’re talking tests to make sure that’s the part is actually the problem and nothing else I.e multimeter testing for shorts and faults. Pulling the part out of the machine/opening the part. Putting the new part in and testing that the machine works properly to that point and the boiler will heat up and calling it good.

The prima has two access points depending on model and mine has the easier one. Where it can be accessed from underneath, is rough because the billing hours are gonna fucking stupid it’ll be a third the price they’re going for in a fair market for the year.

But I’m gonna try and talk with them to a 3.5 but I honestly thought I’d be paying no more than 6 maybe 650. I found a guy while I was calling around that I’ll try in the future if needed and he said I bought parts he’d do the work for 300 and I thought it was sketch at first and he explained he has the prima and it’s layout is the most user friendly for working on that charging that any for it was highway robbery :/
