We just keep a solid preheat, I check my oven a laser thermometer and itās usually 15 degrees off than what it says but I go 415 knowing itās 400 for 45 and then turn it off and let them sit for 15 minutes. Not soft firm but mushable texture. I like the fat ones vs the skinnier ones they bake/roast more evenly.

No, with European soft steel knives which always have some burr left they straighten it
The burr itself is very sharp but it last a couple cuts

If you properly sharpen the knife there should not be any burr left and the edge lasts very long depending on the angle and steel
Sg2 has good edge retention so it should last long
If you try using the rod on a hard steel with high retention and low toughness it will chip it
But ceramic rods can be used to deburr them. Since with harder steel burr is easier to take it off (you can imagine aluminum foil which soft and you can bend it back and forth many times, while something harder will snap quicker)

They say no... but I watched a video from a knife nerd and he started with saying it doesn't. Then he dulled a blade against a brick, used a ceramic honing rod, and then tested the knife and it was very clearly sharper.

Honing rods vs. whetstones. Do they work? For short-term and quick honing of your knife's edge, a honing rod will do. I personally do not hone my knives with rods or "steels", since I sharpen my knives weekly or monthly. The results you get from a honing rod can be surprising, especially on a Japanese knife.

Sharpness is strange because there's a difference between absolute sharpness and perceived sharpness.
My early kitchen knives were extremely sharp, but had really bad cutting performance
They would shave hair without trouble, but struggle to cut through a carrot
Some amount of the loss of sharpness when putting a knife to brick is actual blunting of the edge of the secondary bevel
But some is rolling over of the edge, resulting in the side of the secondary bevel hitting the food instead of the tip
Honing steels (or their ceramic counterparts) can let you roll those back over to center if the bend in the bevel doesn't go too far back into the primary bevel of the knife
Rolling it back to center means that now the actual cutting edge of the knife is true again, and hitting the food first. Perceived sharpness is improved.
Most people spending money on a nice kitchen knife would be best suited by buying an affordable high carbon steel knife to learn about maintenance before investing in something made from a high end supersteel

Personally I re read his statement and Iād still stick with mine. He did word it better in the sense that it will teach you the care you should have. As if itās a sense of self discipline, in my honest opinion it teaches you to appreciate it more. I have hereditary high cholesterol. I'm no MAHA, but the science just isn't there for dietary cholesterol affecting your numbers and heart health. A lot of medicine is still hanging on to old studies that haven't held up. Unless you're drinking gallons of it a week, don't think whole milk is going to do any harm. Overal saturated fat? Sure, there's some evidence still there. But unfiltered coffee (spro, etc.) prob has a bigger effect than milk.
Make sure they test for LPA cholesterol, too. Often have to ask since it's relatively new.

Yes, this has been known for a while and is continually reinforced with new studies. (You can search EAF for "cafestol".) Paper filtering knocks it down to negligible. I believe this was the initial reason Rao came up with Filter 2/3.

Getting in the protein while on it is much harder than it looks, maintaining muscle if you have it becomes a bit harder as well. So if you start definetely have a plan for protein and fiber and start working out with your body weight to not feel weak. Everyone reacts differently as well, some people donāt have stomache problems on them others do. Both my wife and I burp a lot on it and take additional stomache acid pills to balance it out.
You donāt realize how much you spend on food until youāre not buying half the amount you use to and can split meals easier when going out.

Personally the navigate provides a pretty good job at it with alt milks and very easy set it and go
Counter Culture (Silverlake) has one. Itās $200, but they are every month and they have lots of machines. New educator (Lena) is super nice and patient. Have considered taking it since other cheaper classes Iāve had were pretty bad. It is hard to learn at home if you donāt have a pro machine. ES1 milk has improved my game a lot from Breville. I suspect itās more about repeating over with soap/food coloring (or in cafe) than instruction.
Can you drink lactose free milk? The sugars conversion only slightly increases foam but otherwise itās the same. Maybe we do a milk-centric meetup sometime.

Great! The ultra-filtered milks will foam super fast due to the extra protein, but you can mitigate by stretching a little less. I do think that not having perfect texture is the actual main hindrance to improving latte art. I always do much better when Iām practicing in a shop.
sometimes stronger/commercial machines steam so fast that the stretch is super quick and its easy to blow past it

Beat me to the punch, it sounds like an agitation issue and itās causing the fines to settle and clog the filter. Iāve played around with it before with shit coffee and managed to clog a 18g brew at 8 minutes just with constant agitation.

The pressure sensor is plumbed in to the wrong place on that machine. So you can't really do pressure profiling. And I'm not sure if it has flow profiling? But if it does it would still be limited because of that.

Agreed. And why such a large bloom? Exceeding 2x could be driving more fines into the filter above the bed (i.e. extra agitation before you start your pours). You can always do multiple smaller blooms that just wet the bed and donāt cause it to rise so much.
But all that said, nothing wrong with water leftover. Last part of drawdown is often not super desirable flavors. You can cut off most POs early and add bypass with same or better cups.
Bloom should be enough to wet the coffee 2-3x is plenty I usually just do 3x weight for consistency
I normally do around 3x but I'm also no expert in pour over
I suppose if youāre often brewing fresh UL ⦠otherwise, I let the bubbles and drainage dictate. And that can be hard to see with a big all-in-one bloom.

Iām bad at pouring. I bought a Melo knock off from AliExpress. I usually pour everything over that and find it really improves consistency. I also just donāt have to think about technique at all.

Melo usually works best with a traditional bloom anyway. And that seems to be a problem with hour technique.
I think even āgoodā technique only matters so much when the coffee itself is a huge variable. After trying lots of recipes, Iāve found that the 2x bloom + long wait + 1-pour method is most consistent and fastest drawdown. Or just join the soup cult and enjoy all the spare time.
Sometimes I dgaf and high flow rate my pours but my blooms are always slow controlled pours regardless of the other pours

seriously though my input would be:
- Level the coffee bed before bloom

- Try to hit an exact number for your bloom it would aid in consistency. Having an exact number and trying to get within 5g of that will help in terms of consistency and troubleshooting rather than aiming for "2-3x" bloom. That's a ~20g difference you're brushing off.
- For this coffee you may be better off doing two pours to reduce agitation. 1 pour to hit that 60g bloom, then another long pour until you hit target weight. I have found amazing success using Lance's 1-2-1 framework with a 1:17 ratio and I also think it's because I also favor the high aromatic and pulled apart flavor notes. I only add more pours when I need more extraction say for an iced coffee brew or if it's a washed ultra light
I think you're just agitating too much. So either change your pouring technique via the suggestions in the video I linked or do only one pour after the bloom.
Today I fucked up and didn't zero out my scale before the bloom so I ended up accidentally doing a 3 pour recipe. My brew looked exactly like your video. The final ~25g took like a solid 1 min to drain.

Also Data S is like $4k after you add the scale and tablet. I find you are getting an objectively worse functioning machine with even less software perks. Data S can not connect to visiualizer nor is the community as vast as Decent. Plus, we don't know how these machines fare over time and with repairs so take that risk as it is.
If you're down to drop cash, wait for Bengle to release or Met to mature. If you don't have cash moneyz wait for Bengle to release to buy a refurbished decent, buy the 20% decent available rn, or buy it used. Also contemplate buying gaggiamate or gaggiuino

hard to determine unless you get a few from someone whose brews don't clog as much for the same coffee
imo the pour height and rate seem fair. not something that'll necessarily cause a brew to be 6 mins on its own
4x bloom is my goto. in fact 3-4x something I'd recommend for thorough saturation
higher pour rate doesn't automatically mean more fines migration unless it's done for the same time duration as a low pour rate (which it usually isn't), and even then it's hard to say for sure without testing. but the fact that you're pouring that low makes me think that kettle stream isn't the main culprit. ime you'd have to arguably hold the stream significantly higher without breaking to cause the amount of clogging you're observing
weird, theyre just t90s and ive replicated the issue w abaca as well

I feel the ocean breeze blow through my over shirt cooling me off. The train arrives. I'm in the train, it's safe, busy, lively with high school kids laughing and being jackasses. Everyday adults simply lost in thought. Young parents pointing outside for their children to see the view.
That's when I turn my gaze to the window and see the rolling hills of LA brightly lit, studded with homes of all sizes and a plethora of green spaces fly on by. Maximum one lane roads, evevated rail lines, separated bike lanes, wide sidewalks full of all sorts of people. Living. Not surviving. Not struggling. Simply living. All this interweaving into a complex yet beautiful tapestry of what it means to call oneself an Angelino, whether for a few days or permanently.
I just hope to achieve that it doesn't require another country bombing us to oblivion, or a 9.0+ earthquake, or bloodshed.
Alas, the US (and humanity as a whole) doesn't seem too keen on rectifying solutions until the situation is quite dire and terrible.
I thought that might be what you guys were referring to, personally itās not a big deal in that factor, there are only 3 machines on the market that measure at the group so it becomes a bit of a moot point. For the software even decent had to start somewhere to be able to grow and market is growing for these type of machines. The delay from the sensor vs the group is only a .5-1.2 second which can make a some difference I wonāt disagree there but itās borderline splitting hairs at that. Iāve seen plenty of visulizer videos on it and it says so on the site and like every video Iāve watched. Everything looks like as live data as you can get for not measuring directly from grouphead.
MET is ideal and Iād love it but everyone having the issues right now have me a bit hesitant. 2.5k and has tablet and scale aināt bad and they run sales on their websites from the looks of it.
But the bengle is definetely nice but I donāt feel itās a 5k price point after taxes and shipping. Hell my prima doesnāt even feel like 5k price point new aside from aesthetics and steam power.
Iām gonna play with a wendougee this weekend at a friends place so Iāll report back on the pros and cons of actual usage. Maybe it hits maybe it misses, weāll see.
The bengle is sort of a weird spot for me as a DE1Pro owner. Sure itās nice. Itās an aesthetic upgrade and it should be quieter. But I donāt think itās worth double the price or worth upgrading quite yet. Maybe the next iteration? I donāt know

It's not a delay, it's fundamentally measuring something different. Unless I'm misunderstanding what you mean by delay.
It's something you might not really notice or care about until you really figure out profiling. But it will prevent you from doing a number of things that people use regularly on the Decent

the measurements at the group yes are gonna be much more accurate and thatās what the decent does and excels at including reading the lack of pressure for data.
Saying delay is probably a piss poor way putting it but made sense in my head using that to describe the difference and thatās my bad.
I donāt doubt what the decent can do when measuring pressure at the puck but I also donāt think that saying the wendougee is not pressure profiler when itās reading pressure directly at the outlet of the gear pump is accurate either.
Now I have no dog in this fight especially comparing the two side by side and owning neither and only ever having used a decent(yet). But I feel like given everything it can do it should still meet the criteria of pressure profiler just not as accurate/ efficient of one the decent.

From what I understand the Wendougee doesn't measure downstream of all flow restrictions, so it's not measuring the pressure the coffee experiences it is instead measuring the pressure that the flow restriction experiences. I only speak with a little caution as I haven't torn down the machine myself, but I've read such online and then confirmed with Lance whom I trust.
The two most immediate limitations is pressure based exits (especially on "pre infusion" (bad term but I digress)) and pressure limiting on flow profiling.
I'm reminded of the Synesso ES.1 which has the same fault. On that machine it measures pressure without a portafilter even in the group

It will have issues only at low pressure, as soon the back pressure from the puck is higher than the pressure from the tube sizing it will show the correct number

This is a bit unclear to me. Tesla seems insistent that they count it so long as the disengagement is within 4 seconds. But you have to take their word for it.
The recent cyber truck crash fElon blamed it on the driver disabling autopilot four seconds prior, kinda convenient timing.
Also fun fact, the cyber truck would take nearly 4 seconds to come to a complete stop, from the moment you start breaking

How long should it take to swap out a a boiler heating element on a single group machine. Knowing thatās exactly whatās wrong with it and all the panels are already off it.
So weāre talking tests to make sure thatās the part is actually the problem and nothing else I.e multimeter testing for shorts and faults. Pulling the part out of the machine/opening the part. Putting the new part in and testing that the machine works properly to that point and the boiler will heat up and calling it good.
Depends on the machine and experience? The E61 I worked on it would probably take a little while but not too bad. Maybe an hour? My La Pavoni it's maybe 30 minutes, and that's with the machine fully assembled. I have no clue with the Argos but probably it would take a while.
I could see 2 or 3 hours of labor being charged? Maybe more
