after 2 years of exploring UL roasting and producing a lot of interesting and unapproachable (and frequently awful) coffees I’ve finally started integrating what I learned into my preferred style. Now roasting light-medium (vs medium-light) with some development but lower drop temperatures. Botz is one of my favorite examples of this style

UL was resting min 3-4 weeks but often 6-8. Just not easy to roast that style in a trad drum (for me at least). Light-mediums resting typically 2 weeks and really good at 3-4.

People come to me with various feedbacks when they first brew my coffee. Some say it’s very intense and bright. Some say it’s very sweet and clean. Some says it’s very muted and roasty. It’s all the same coffee so I need to dig to the bottom of this.

yes, from a chemistry standpt the things to worry about are oxygen, light, moisture, temperature..

all of those things cause coffee to 'rest'/age/degrade.

freezing/vacuum sealing in a fridge is just the easiest home method to retard all that

the other worry though is degassing of CO2 but thats less of a concern with light roasts i guess

Is this really true? I think that approach is better on paper than in reality. I feel like immersion IMO just muddles everything and don’t really see how it would be a good indicator on when something is “peak” just because you cut out the human error. You could still make bad immersion as well

I understand where you’re coming from but I don’t really think immersion will bring any conclusions in regard to rest/age/peak of a coffee. IME it’s generally such an unpredictable thing no matter what roaster or coffee you’re going to focus on.

Go in the door and see the sign by the escalator pointing up saying order pickup is located by the portrait center. Go up the escalator and find a closed customer service desk with a sign saying order pickup will be located downstairs by intimates as of August 2025. Go back down and look for it. Finally find that counter a girl goes to the back to get them and comes back 10 minutes later. I usually sympathize with malls but damn this is their answer to online shopping?

I've never used the met but I am very happy with the decent outside of software looking like it's from 2013

In 2028 I will most likely choose between Bengle and Met because I think both will be mature by then.

I'm really hoping Decent revamps their UI experience or with this previous update other people make really nice and intuitive skins for Decent

For Met, I'm just hoping manufacturing kinks get work out reliably and stays reliable. The software looks banging. So really I'm just watching them to see if they can manufacture as well as they can code. If they can I'm down to buy the Met and the steamer wand if the workflow ain't kaka

For someone who was missing the acidity punch and juiciness that the V60 gave when using the O1 this recipe by amulet hits very close to a V60

Honestly it’s a bit toooooooo acid forward so I would recommend 1:16 ratio instead of the original 1:15

But I will say, this recipe on the O1 is juice juice juice

I’ll try it out with different beans and update but the brew I had did today was with a washed pink lychee from Obscure. The flavor notes lean tropic fruit acidity and sweetness.
