I think something that’s changing is a lot of people aren’t as much of a future in coffee anymore even when the pay is good. So many people open their own shops or work farmers markets, I had a co worker drop their career because they realized they saw a kid making more money on tictoc in 6 months then they did in 4 years.

It’s rough when times change so drastically for younger and older generations. One puts so much into things and others just wanna get stuff out of them. I see both sides but it’s rough all around.

Then less liquid for subsequent pours

But for modern flat bottoms I enjoy equal pours

The hydrangea x Ondo chiroso was a banger on the O1

I also stuck with my 1-2-1 brew I do on V60. The O1 brought out more tropical fruits while keeping at bay the funky after notes that get sometimes on V60

For V60 I do one long pour after bloom. I found pulsing muddies the flavors

How many pours after bloom are you doing for V60?

depends on the dose, but usually 2 pours

for 15 or 16:240, I do 40g bloom, 100g pour, then 100g center pour

the last 100g I try to match the flow rate of the coffee exiting the coffee bed (i.e. the bed level remains constant)
