i think its cause the decent requires 0 pressure from the source. plumbing in-line like other machines require pressurized water. this won't let you stop or drop the grouphead to 0 psi. lets you do blooming profiles on the decent, etc.

Decent also recirculates water (spits hot water back into the reservoir) and that can cause bacterial growth unless you’re cleaning the reservoir everyday 😵‍💫

I agree and that is something I appreciate deeply about the US's education system. It is less determinism and k-12 (and even through graduate school) tends to remember you are a human. My parents in India and people I met abroad always reiterated how interesting and novel it is for a teacher in the States to have a caring relationship outside of the normal instructor and student. I have been enjoying the idea of moving to a rising power such as Vietnam, Thailand, Indonesia, or Malaysia. All of them are growing rapidly in many sectors. My concern with those countries is how they’re in the sphere of influence of China. Not the best not the worst. That is something to just ponder.

ondo kinda has something for everyone. But they really nail modern brew styles and coffees, they charge a premium and target coffee nerds. I'm curious but not optimistic that it makes up a large part of their business.
