Surge pricing is a pretty a popular experiment in Europe and some Asian cities. It’s beginning to show up in N.A. as well. I believe Wendy’s is thinking of implementing it soon. It’s similar to the dynamic pricing used by resorts, theme parks etc that has been in place for years where you get you pay more during high demand times and less during off hours.

I used to work in ticketing when I first started my dev career. It was both good and bad for that. Good in that if you bought in advance or for less crowded weeks to go skiing your ticket was dirt cheap

well $40/200 is kind of expensive. so I would probably aim towards 25-30% of the menu price as the cost. So like $10-12 per cup

but also I don't buy retail bags to do pourovers

I buy in bulk so it's less expensive per gram and we have like 50-60 servings per cup

I don't use multiplier; I first dial and brew the coffee first and evaluate if this coffee is worth the money

and then do the math and see what the cost percentage would be

It’s fun. It’s sportsball. There’s running and strategy and points. Don’t need to be as fit as tennis/basketball/skating so wider variety of people playing

It’s actually great for everything but pourover. Can do ultralight roasts, with less clarity than MAX/SLM, but very pleasing presentation that I very often like as much.

With Met, the difference might be even less. My advice for everyone for espresso is get SDRM, and later MAX/SLM if you need it.
