I think B&G Za is good and dandy. I don’t think it’s killing it in the pizza department like Sei or Apollonia’s or Secret. B&G Za is a bit soft. Not much crunch or cracker like bottom. The sauce is pretty good. Well balanced. I enjoy the well done char bits.
What I’m glad about is how this area has a dedicated neighborhood pizza joint. This place has a good amount of people living in a 1-5 mile radius and good amount of foot traffic. That’s a really good combo for pizza. I’m happy the people nearby get B&G Za in their backyard. Solid stuff and if I lived by I’d be happy

Idk if I fully agree. Their scale is the only one I know of to do the math for you on ratios. The brewer is pretty innovative in a number of ways. The espresso machine maybe I agree, though it seems to be a more accessible (price and UX) Decent.
I disagree in terms of innovation. They tend to push the bar more than a lot of other brands and target the general consumer a lot more as well. Which is an underrated niche. I like that they’re widely distributed and easy to find because some consumers aren’t going to order online and don’t have access to specialty shops.
That said I do feel like they tend to be overpriced for their build quality.
I think the scale doing a simple multiplication function is an utter joke. I think it’s a red herring feature to set them apart but is deemed useless very quickly.
I know nothing of their brewer except that it clogs like hell.
Their espresso machine I’m hesitant on. I will wait to see reviews

From an engineering perspective I don’t think they’re doing anything other than rehashing what’s happening in the market in their design language like Apple does. Like apple they come out with these red herring features to sell more but those features quickly become useless or obsolete. Also like @earnest robin said, almost all of their Mk I products are failures. That’s irresponsible in terms of a design and as an engineering company.
I’ll give credit to the Aiden for being good competition to XBloom. I am watching their ES1 closely.
fellow is 100% paying for brand and aesthetics but no other brand is bringing aesthetics tbh. but they also do bring some hobbyist function down to lower priced consumers just from sheer economy of scale

They changed a long time ago, they were hopeful and brightened prior to the mugs and containers. I got into an argument with one of the VP of sales years back at coffee fest. They hired a lot of big wig people to expand sales but they lost me quite a bit when they issued the grinders to crate and barrel before the kickstarters who funded them. They slipped down that corporate road and lots of the early team sold their positions from what I’ve read and heard.

What’s really interesting is how egg nog is mainly an American invention and food item to preserve eggs and milk before refrigeration was invented and common place.
Back in the day they would mix a large quantity of liquor into whole beat eggs then milk and maybe sugar. They then let that sit for weeks if not years. They ethanol in the high proof alcohol pasteurized the eggs and milk over time. That’s the reason why egg nog is usually drunken chilled
The wealthy usually used high quality liquor, sugar, and spices.
It is shocking and confusing to me with the advent of refrigeration that egg nog didn’t evolve into a warm served drink. It continue to be served chilled even in the dead of winter. It is bizarre. I personally enjoy making my own egg nog and serving it warm. The spices comes through even better when served warm and it’s more comforting when it’s cold

Simply set the temp to 5-10F below the temperature that egg protein coagulate. You then can literally never fuck it up

Most super auto machines use a lower brew temp and have grinders without enough uniformity to highlight an ultralight roast. That’s why I suggest something more traditional like Howell. I think it’ll be a good fit.

It also helps with flavor. But the main benefit is ensuring it's safe to drink
And it can be stored in the fridge indefinitely. Some people make it the year before. But I've heard around 3 months or so is best
if you suck the insides without touching the shell how will salmonella get into it
but i don't think aging if for salmonella, it's for pasterization so it doesn't spoil
people drink raw eggs all year long without aging it
The low alcohol percentage (low being ~15%) can kill the salmonella but takes time. A lab in Rockefeller University did a very informal test on it, and that's where I got the recipe.
Not recommended in the US for risk of food poisoning. We clean our eggs but they are not pasteurized nor vaccinated. The UK for example does vaccinate for salmonella

- city let them open
- they stayed open for 6 months
- then city discovered something "wrong", and forced them to close / fix the issue
- city also didn't have an inspector appt before Feb, but they've already fixed whatever was the inspection issue
so he's been closed, waiting city inspector, until Feb 2026 😐
in the meantime, he's doing pop-ups at diff places. He said he may be in San Diego at end of Jan. (and doing coffee consulting for various places.. he was mentioning a client he setup in Vegas)

Baby albacore - dank. first bite lacked lemon sauce, second was amazing.
Bubs bread - duh
Pickled muscles - miss. sauce lacked depth, one tone. majordomo does a better dipping sauce.
Rice risotto - good not great. After ordering a Nebbiolo glass it made it great, remembering to always have risotto with wine.
Cornbread - initially honey was too overpowering. once I added extra butter it became sublime.
Steak- good not great. Expertly grilled. Charred on both sides ( yes I checked). Lacked depth so the bovine didn’t cooperate this time. Some chewy bites that’s lasted minutes. Matu still numero uno.
Autom veggies - mid. Not quite Costco bag (iykyk) but boring.

Honest question, if you lean heavy into cream tops is there a need a decent espresso? Unless you’re making a smaller proportioned drink I feel you’re more than likely gonna kill or ruin any notes from a nicer espresso, the sweetness from most of the drinks will also overpower it. I’d wager you could over/under extract shot and still not notice it. I do wanna state I enjoy a good cream tops but feel like it could have shit or poorly pulled espresso and not be noticed.
