Sodium citrate doesn’t have much of an impact on béchamel or any its non cheese daughter sauce. It’s mainly utilized to make milk proteins and fats stay emulsified even at high heats or low moisture content. The powder doesn’t do too much when no cheese is present.

It’s the worst coffee related purchase I ever made sadly. It was great for the first six months and then complete dog shit ever since. For a classic sandwich Mike’s deli 2 DTLA in Little Tokyo, it’s slaps hard and fast and leaves you asking for another. Takes you back to when your mom would make a sandwich and it was plain but the best thing ever at the same time.

For something more Italian or beefy go to Mario’s in Glendale and get most anything “no middle”.

I’m a hoe for bub and grandmas roast beef with the apple slaw. It ain’t worth the price for portion but god damn it hits the spot every time.

Before wax paper did away with their Chinatown location I’d say the meghna chakrabahti was one of the best sandwiches in all of LA and I’d fight a bitch over that.

And lastly a classic double dip from Philippe’s Downtown with extra spicy mustard.

Not sandwich related but but the half ginger scallion chicken from won kok and add the hot sauce to it is fire. Personally think they’re mid for dim sum but that just my opinion there.

Not a bad spot just depends on who’s working behind the counter, when they first opened it was all style no substance but they got a lot better over time. Worth a visit, it’s a vibe inside.

Their pastries are well balanced and I greatly appreciate it. Many of their stuffed or topped products are half filled with cream and half filled with a tart jam or purée. I love that because cream can get too fatiguing on the palette. The tartness from the fruit component is a great counterweight
