@boreal solar warned that it has trouble getting up to a high enough temp for light roasts, but luckily i'm in the medium camp, so 84 to 88 C should be good enough.

Heh I’ve had such mixed luck with that. I’ve had radically different coffees taste close to identical the next day and some others that actually taste better the next day than after rest

I had a watermelon coferment that tasted better the week I roasted it in then ever after that. Probably just because the processing was so dominant though. That’s not normal

That is tough!

The Valencia pride has ZERO fiber. It was custard in texture. Sucking on the seed left nothing in the teeth. A wild experience. The flavor was sweet almost cooked sugar, not mango forward, and had some vanilla type of after taste on a few pieces. Very poundable. I had to pace my self.

The Golden Lady had a magnificent orange color. A sunset orange and the flavor was like a 5 mangos in one. Very potent and had some texture and fiber. This is the pinnacle form of a mango I think. This is what I imagine cartoon characters eating.

So it’s your choice in preference really!
