If you're using a manual espresso machine, you can also add in calcium and chloride

If you have like a p100, you probably run the 20/60
Gh is hardness, which affects extraction
Kh is alkalinity
You go up in alkalinity if your shot is too sour
Like, yeah. You want sour. But there's nuances in sour. Higher alkalinity will help you get the more nuances

Does anybody want to split multiple batches of fruit from Murray Farms in the next couple of weeks? Iām thinking figs, persimmons, cherries, and blueberries. Honestly I love fresh produce so Iām in for any fruit and veggie. I just hear about Murrayās fruit but never tried it.
Iām thinking of doing this for June 14th or 15th at Hollywood or Mar Vista.
Also if you need ideas what to do with pounds of fruit here are a few:

So easy, versatile, and such a damn good topping on anything
Depending on the poaching liquid you can get anything from tannins, to sticky sweetness, to floral notes

They are good Iāve had 3 flats from this so far and picking up my 4th today. Iāve had Arvin Glenn; Rainier, and early Rockport (big miss on this one). Sequoias were great last year.
Nothing beats Andyās though when they start coming to SM.
