He said it’s running properly - he had it fully refurbished. Issues are shot to shot consistency and milk steaming. Initially I thought it was machine specific issues but this sounds like puck prep and steaming technique
edit: totally forgot the pro 300 is a dual boiler.
On a separate note, as one of the more aged members of the discord I've always struggled with getting turbos that I like. Coming from a traditional espresso palette I just couldn't convince myself to grind course enough and my turbos were running 15-18 seconds. Finally started pulling shots at 8 seconds and DAMN! 🤦♂️
I was trying to dial in the Baseline profile on the decent and I went so coarse that the shot completed during preinfusion. It tasted pretty damn good so I didn’t question it 😂
You’re slowly being converted into one of them. Everytime we get together you’re roasting a little lighter 😅…and now 8 second Turbos?

Lately I roast 3 or 4 coffees medium and the same 3 or 4 coffees very light. Pretty fun to try to nail both styles of the same coffee but dialing in sometimes feels like an IQ test 😛
Best part is the medium roast is ready in a week and by the time we're out the light roast is rested enough
I should probably take advantage of that more. I’m currently drinking three day old underrested light roast 😂
which of course you run out of before it’s rested enough to really shine… sometimes hard to make myself buy roasted coffee when I’m sitting on 50lbs of greens

Steam is very slow with the stock tip. I'm using a 2 hole with wider holes and it's great
Shot inconsistency could just be about adjusting from a lever machine to pump, but it's also possible there's a water dispersion issue if the refurb wasn't done right. Water comes out of one off center hole, then goes to a dispersion plate with 6 holes, behind the shower screen. If one of the holes in the dispersion plate is lined up with the main hole you can end up with channeling.
It's easy enough to line it up halfway between 2 of the dispersion plate holes

The factory setting is like 1.2 bar
I believe the steam boiler has a 2 bar prv, so I turned mine up to about 1.7 to make sure I don't trigger the prv

I think he wasn't able to get good milk texture because the boiler pressure had been too low. it was supposedly 1.5, but cranking to 1.7 helped a lot
one thing he had a challenge with was using an IMS basket. we went back to his default basket which came with the machine, and it started to approach better shots more easily.
(despite the default basket being slightly waisted)
I think it works better for him too, as he can use a smaller dose.. he's extremely caffeine sensitive.
I mentioned possibly doing what I do.. mixing in some decaf (which feels dirty)..
or getting one of those funky step-down 7g baskets, but they're a bit of a pain to tamp

I liked how quiet the rotary pump was and that the shots were consistent. The temperature is consistent and steam power is greater than other machines in its price range. It uses an hx system to feed into a smaller brew boiler and pulls lovely shots.
I went to a decent de1pro because of the smaller footprint and liking to tinker. I’d also initially chose the linea for my business which recently closed and liked the idea of the decent more for home use

One thing I will give props for is that the shots come out full bodied. With the decent the shot is always just a smidge thinner no matter what profile I try.
But not having flow control or proper preinfusion(without plumbing the machine) is sort of a no go at that price point tbh.

The current Fondry Pastry Deliveries for our cafes will be WEDS - SUN (KQ HLP & LOQUAT) and WEDS - SAT (KQ DTLA) since we close on Sundays at DTLA currently.
In terms of sell out, it's hard to gauge depending on the days, weather and predictability of people's appetite.
Generally speaking, KQ HLP does sell out quicker around 10a - 11a and KQ DTLA will sell out around 12p though days will always vary. Some items go by faster than others as well.
Adjacent to offering our Fondry in house baked goods, we will also sell Bakers Kneaded pastries to supplement so be sure to not confuse which pastries are Bakers Kneaded and Fondry. Simple way to identify is to look for the Fondry Logo.

Really depends on what you’re into! We try to bring in super clean coffees to co-ferments and experimental stuff and anything in between
I tend to like Mexican and Ethiopian flavors, rich chocolatey.

With the meticulous you should be able to get something usable out of anything. A really light roast should also work well with that Zerno with MPs you have coming.so it’ll be a fun experiment anyway 🙂

other beta testers mentioned it doesn't really take enough water capacity to do a filter 3.0 well.. max 100 to 125 g of water.
but a few have done some "sprover" profiles which are nice.

You’d be surprised. My margins suck and my customers always compared the price to klatch who an afford to buy in bulk for a quarter of my rates. I was underpricing my beans and still had a lot of local people complain. People bought them from EAF or other communities but locals care more about price and specialty fans are still a minority.
That’s also ignoring the bulk discounts for things like packaging and higher capacity of roasters meaning more profit per batch etc
Roasting and baking are similar. People all fantasize about a quaint little boutique but both can scale with minimum labor IF you have the space and large equipment
If not, your labor scales along with your sales and you will never make money

I keep seeing people attempting to start roasteries on a bullet because it’s almost a meme at this point. Yes some companies have done it but if I’m honest the batch capacity is way too small to make it worthwhile. Sure you can whip out enough beans to sell at a farmers market but if you actually stop and work out how much you were reimbursed for your time it’s a little depressing.

i mostly just picked Fam’s 60/90 for two reasons:
- a friend said he was using it for espresso
- easy to mix, with a mg scale + epsom salt + baking soda, 1 gal at a time

I found the cups got too hot to hold when I used them at home but they were nice to drink from
I usually just go to the kinto showroom at ROW. I should diversify though.
I use epsom salt, magnesium chloride, calcium chloride, baking soda and potassium bicarbonate for PO (thank you Gagne) and then epsom salt and baking soda for espresso (using the barista hustle concentrates recipe). Typically 88/45 for spro and 75/38 for PO though varies depending on what I’m roasting and which burrs I’m running.

I didn’t read it all just abstract but I wonder if the texture the graders are mostly effected by is texture of the hand or texture of the mouth.
For a while I was running 5 different waters for PO from 60/20 to 175/50 to experiment and ended up preferring 75/38 as an all-rounder. I use 88/45 in the decent because I mostly use it to make milk drinks for my wife with darker roasts. And when I want a turbo it’s not too bad
Haven’t run the same experiment on the Decent because mine is counter sunk and it’s a pita
