I do love avocados and I do make guacamole often in my molcajete. Ever since I got one and learned to make guac in it I never went back to any other way. The flavors and textures really do shine when pounded and crushed versus smashed in a bowl. It’s like pesto; traditional method is laboring but worth the pain

I found goat has quite a bit of collagen and connective tissue similar to a chuck roast near the brisket side. Long cook times in braises or roasts do it well.

I’ve dry brined a goat leg and let it sit in the fridge uncovered over night before a roast but I haven’t wet brined or even tried searing it off like a steak. Something I thought of is maybe you can slice a leg of lamb into large fillets, brine, then sear as a steak.

As of right now I’m still doing comparison to finalize my thoughts especially on flavor but texture has a large difference I think.

Many times Japanese roasters will include “silky” or “smooth” or “sticky” for texture indicators. With the ZP6 I was hard pressed or struggled to find that tactile feeling. It all was not as differentiated as flavors were. With the Pietro texture differences are more pronounced and easier to identify

I don’t plan to make water part of my variable process. I also don’t plan to do side by side water testing. I like coffee, but I don’t like it enough as a hobby to have mineral dropper bottles or different gallon containers with specific recipes.

I did a side by side from TWW to this recipe and found this recipe to be better and stuck with it. If there’s a better recipe I’m down to try it. It will take some convincing given this water is pretty damn economical and flavorful

Well I plan to not have multiple grinders for a single brew method. Outside of the Z1 I won't buy another grinder for espresso other than to replace the Z1. Burrs will be changed a bit in the beginning but once I find what my palette enjoys the most I'll most likely not buy any more burrs. So my plan with grinders is the same with water. Find something that works very well for me and focus on finding and enjoying unique coffees

@desert stirrup I have a Z1 and run CV3 in it as a good middle ground between espresso and PO. I have HU burrs also for espresso only and a Pietro and K Ultra (plus a NIB Lagom Casa I’ll sell).

If you’re going espresso only the HU may be best for Z1, and swapping burrs is easy on the Z1. We can always figure out a time for you to play with the Z1 at my place if you really want to see it in action.

I live in a small 12 unit complex in West Adams so my building is an oldie. It was built in the 1950s I believe so it’s oddly laid out and small.

On my long walk with my dog I can to the conclusion that I think it’ll be worthwhile to spend the money on a new DE1 in the next few weeks, make my station how I want it then see what Decent does and offers in the late summer, early fall.

Maybe in a year or two if Bengle is doing well I’ll either sell my DE1 or trade it in for a Bengle. I’ll also buy whatever upgrades trickle down from Bengle to DE1 to keep it up to date as much as possible

I found all the profiles overwhelming at first, but after a little bit of time it becomes more intuitive.

@desert stirrup I have a Flair 58, which is a good machine to learn on. I first saw the Met at the booth at SCA in Portland in 2023. I can wait to not spend $4,500 for a comparable machine that can also deliver a more viscous shot, which levers are known for, as well as a more modern shot. To me, it's worth the wait. I will see the Met at the booth in Houston. We don't know how fast they will move through the ramp of orders. This fall or by November/December will be okay with me. But that's a personal decision.

  • limited reservoir, only up to ~ 100 g water (Decent can keep on going, to a 1:10 ratio easily. Met can probably only do 1:5 for 20g input dose)
  • no temp profiling

Met leans more towards accidental pre-infusion with how it's designed. i.e. why i said "if you like lever profiles", you may like Met.

parking at The Raymond is awful, just park somewhere on Fair Oaks right before the place, and walk there.

I usually whip a u-ie at their intersection, and then park along Fair Oaks.

Chi Spacca on Melrose. The atmosphere is intimate but not stuffy or uptight, the service is prompt but not uptight, and food is great. Steak is expensive but when is a 50oz dry aged porterhouse not expensive?

I went there for my birthday last year and I thorougly enjoyed my dinner 🙂
