The flavors and textures really do shine when pounded and crushed versus smashed in a bowl. It’s like pesto; traditional method is laboring but worth the pain

I found goat has quite a bit of collagen and connective tissue similar to a chuck roast near the brisket side. Long cook times in braises or roasts do it well.
I’ve dry brined a goat leg and let it sit in the fridge uncovered over night before a roast but I haven’t wet brined or even tried searing it off like a steak. Something I thought of is maybe you can slice a leg of lamb into large fillets, brine, then sear as a steak.
Maybe someone or some culture already does this

Someone was selling their P64 here for a Z1 awhile back and someone commented on their post saying the P64 was quieter and faster.
I find a quieter and faster grinder to be a big plus is work flow
Get the Z1 for the blind burrs, better ionizer and smaller form factor.
The p64 is a nice grinder but tbh it’s starting to show its age a bit and it’s not worth more than a philos or Zeno.

The Z1 will be espresso only. Rn I have CV2 and MPv2 in my car to have a “medium body, medium clarity” burr and a “light body, high clarity” burr.
Should I rather get HU and MPv2 to have “high body, low clarity” and “low body, high clarity” or would I quickly hate and sell the HU given I drink light roasts
I guess what burr or 2 burrs would be best for me to learn and develop my espresso palette on?

I always enjoyed 64 MPs for spro but the dial in window is very narrow and made it underwhelming to use majority of the time
I have no experience w any of the 64mm CV burrs so I would defer opinions on those to other people
If you do and up going p64 I will say the mizen burrs to me were very boring bc how safe they were w the taste profile

Many times Japanese roasters will include “silky” or “smooth” or “sticky” for texture indicators. With the ZP6 I was hard pressed or struggled to find that tactile feeling. It all was not as differentiated as flavors were. With the Pietro texture differences are more pronounced and easier to identify

I don’t plan to make water part of my variable process. I also don’t plan to do side by side water testing. I like coffee, but I don’t like it enough as a hobby to have mineral dropper bottles or different gallon containers with specific recipes.
I did a side by side from TWW to this recipe and found this recipe to be better and stuck with it. If there’s a better recipe I’m down to try it. It will take some convincing given this water is pretty damn economical and flavorful
My philosophy on coffee is to have a simple streamline setup so I can blissfully enjoy what great coffees are being produced. I’m aware it won’t be fully optimized and I’m ok with that given the cups I’m making are very tasty for me

Well I plan to not have multiple grinders for a single brew method. Outside of the Z1 I won't buy another grinder for espresso other than to replace the Z1. Burrs will be changed a bit in the beginning but once I find what my palette enjoys the most I'll most likely not buy any more burrs. So my plan with grinders is the same with water. Find something that works very well for me and focus on finding and enjoying unique coffees
@desert stirrup I have a Z1 and run CV3 in it as a good middle ground between espresso and PO. I have HU burrs also for espresso only and a Pietro and K Ultra (plus a NIB Lagom Casa I’ll sell).
If you’re going espresso only the HU may be best for Z1, and swapping burrs is easy on the Z1. We can always figure out a time for you to play with the Z1 at my place if you really want to see it in action.

Wonder how HU and CV3 compare, but I don't want to really evaluate until 10 lbs have been through each burr to give them an equal chance once they are seasoned.

It's a better software experience I'll say that. Otherwise the Decent is more capable in a number of smaller ways that you may/may not care about. Also Met isn't shipping and is not proven. What do the thermals look like, water distribution, etc.

It's not silent but it's quiet. There's a bit of whirring by the gears/motor

also depends on the profile you're running. some are ultra-quiet if you have low flow/pressure stages.
also, my unit may actually be a bit louder than newer ones, i'm not totally sure.

I found all the profiles overwhelming at first, but after a little bit of time it becomes more intuitive.

also, Mimoja (head of Met software) is super into making UX flows really easy and intuitive. (there's obviously a balance there)

The wait time for the machine is what gets me. The app UX is super good. Decent uses an Android based app and it looks quite clunky and old. However it is an all in one machine and can be at my door within a few days compared to months? I'm not sure what the Met wait times are

Honestly I have no issues with the UI on my Decent. There’s lots of “skins” to choose from but I think that the word skin is a misnomer because some skins offer features that’s others don’t have.

@desert stirrup I have a Flair 58, which is a good machine to learn on. I first saw the Met at the booth at SCA in Portland in 2023. I can wait to not spend $4,500 for a comparable machine that can also deliver a more viscous shot, which levers are known for, as well as a more modern shot. To me, it's worth the wait. I will see the Met at the booth in Houston. We don't know how fast they will move through the ramp of orders. This fall or by November/December will be okay with me. But that's a personal decision.
I wonder if they sell a samsung table on their site. It would be nice for it to come preinstalled for me

Met leans more towards accidental pre-infusion with how it's designed. i.e. why i said "if you like lever profiles", you may like Met.

Liu's Cafe is a great place for brunch but I'm not sure if it's bday worthy unless you want to stick around KTown and hang out
I'm sure there's amazing places in HLP or Echo Park but I'm blanking right now

Oh yeah I worked as a baker at Republique in between job. Marg (the head baker and the owner who is under fire rn) is hardcore trumper.
She’s a talented and skilled baker and chef. Much respect in that. At the same time she would suck Trump off any day.
