Thanks, that one is a favorite at one of the cafes I work with for spro and cold brew. Definitely a classic people pleaser. Did you order the filter or espresso roast? They’re pretty similarly with the filter roast adding a bit of a lime punch due to higher acidity. 🙂

Interesting. I usually consider that profile closer to medium by parameters. But it’s the same spectrum so no big deal. Which roast date is that? Espresso roasting profiles are still a little on the younger side for me so always looking for feedback. I was originally just doing Nordic but wanted to expand the offerings for classic coffee fans. 🙂

super boozy aroma but not quite as strong in the cup until it cooled and then it tasted pretty boozy as well. Thinking it might make an interesting carbonated cold brew. The Dongka was a lot more traditional profile though nothing pops. Interested in continuing to experiment with both. The El Paraiso coffees cupped as expected and looking forward to trying them in a couple weeks!

Mine stayed pretty boozy in cup. I wonder if it was the lower drop temp.

Could be. I had a specific drop temp target that was hopefully going to carry me past a little of the booziness that I smelled in the greens but it took the heat so strangely that I hit first crack later than expected (15˚f higher than normal!) even with a 12˚f ror heading in. So higher drop temp but less “development” time while still an overall longer roast… strange bean🤔

At Ondo now. Got a fancy spro and pourover.
My verdict is that beans were better (and >2x price) at Ondo, but extractions were more dialed in at Endorffeine.
They used an xBloom (grind and pourover) at Ondo for a fancy Gesha pourover and it was a bit blendy. I imagine this is a challenge of stocking fancy coffee at a cafe with many bean options: awesome beans but more challenging to fully dial in.

Hey! I was actually on bar when you came in 😂 thanks for coming by. And sorry that you had a suboptimal experience with the pourover! Both of the Omnidripper that comes with the xBloom have been having an issue yet again (brewer tilting down) and that may have cause the coffee to not extract more evenly. Because of the holidays, they did not get around to ship out the replacement units. But I dial all the recipes for the pourovers and I make sure everything tastes excellent

Dude I'm so sorry for phrasing the way I did. It was excellent. Like 9.5/10, and very worth the long trip to you. I was just trying to contrast the tradeoffs of having many options of high quality beans (ondo), vs. really dialing in a more generally applicable bean (endorffeine). Change nothing about your shop, it's as close to perfect as I've ever seen.

Supposedly they’re working on a new version of the dripper to fix the tilt. I also find using tape on mine helps. Another way to prevent the overfill for me is to just use the xbloom papers instead of the harios(though the cost sucks) as they have faster drawdowns and are less prone to overfilling

You should check out hearts light though if you’re in that part of town. The owner is an amazing person. I’m a little worried about whether or not it’s open though as I haven’t spoken to him in about a year and Google marked it as “temporarily closed” not too long ago. If anything his homemade pour over system is fun to watch. And he’s an underrated roaster.

It’s close to some cool restaurants anyway if you wander out that way.

I was reffered to a public adjuster that is a coverage attorney who specializes in representing you while insurance company lowballs numerous things.
