There's a yuzu seltzer with a light yogurt whipped cream, and interestingly if you pour a shot into it, it tastes pretty good.

||One in particular tasted roasty and I actually had bought a bag of it a week or so ago. They felt they roast pretty light, but admitted Wendelboe is maybe a bit lighter and I find myself gravitating to roasts at that level or lighter||
They asked for feedback so I'm going to reach out to them. And also spend some more time and taste a little more critically

I’ve considered it. I generally mix my own water but when lazy have occasionally used tap in the Bianca. Maybe like once every three months. Two years into its life I had to swap out the antivacuum safety valve and opv due to scale. And this is like rarely using the tap. My shower heads even crust over sometimes when I go on vacation for more than a week.

It’s actually one of the top recommended machines for popups due to its small footprint, nsf rating, and durability. A mini would be better for steaming but I’d probably choose a decent over the micra due to the micras small boiler and poor cup clearance tbh.

- 50 espresso/cappuccino
- 38 drip coffees (batch-brew style through a technivorm)
- 10 cold brews
- 10-15 iced lattes (lost track on that one)
This was in 3 hours so maybe not overwhelming volume but it was hard waiting for the shot to finish before steaming milk while watching the line get longer. I def wouldn’t want to do that every day

oh no worries I didn’t take it that way at all! I was just commenting that at that volume it felt hard to wait for the steaming. I have no idea if that’s a lot or not but I was guessing it was on the lower end of busy. I could probably get better at ghost steaming and building other efficiencies into the system but I don’t want to make that many drinks that often, lol

Most entry baristas don’t have a lot. But that’s something you can fix
for the work environment part, it may be a stronger application if you include things like:
- i want to make a strong positive impact towards company goals
- i would like to work amongst team members who can openly discuss the positives and negatives of the workplace, and are open to testing improvements to make workflow and workplace better
(using your own words)
basically conveying:
- not only are you interested in a functional team, but a nimble and effective one with respectful and transparent communication

glad to help. I've seen certain people work for places where the bosses aren't interested in open discussion or feedback, which causes issues to fester and high turnover rates.
so the interview process is not just a one-way thing. they also need to want to be better, and be open to feedback (in a respectful way, of course).

I feel like being nimble and willing to change and grow is something most places lack, that good shops have. Like Ondo is always rotating roasters they carry, equipment they are using, types of events they have, etc.

love what Erik mentioned. paying attn to the coffee making process, making it repeatable, making it a pleasant experience, noticing when coworkers need help, etc.
- these specifics about every part of the process to make, as Erik so well put it, "the entirety of the customer experience is a sum of the details"
including your version of his statement, and then what some of those components actually are will demonstrate how you think about the customer experience holistically.
and if you want to go down the rabbit hole a bit, you could also think of ways to view and measure the experience, including profiles of users who are coming and what their motivations and challenges are:
- user who just wants a fast cup
- a regular who always orders the same thing
- someone who may need some help, based on how they're looking around with wide eyes
- ..

wow, thanks for the insight. i never really thought of it that way, i submitted the application but you all make me want to send another one 😭. i'll keep these in mind for an in-person interview if there is one. i think i answered a lot of the questions very generally and gave good answers but failed to attach a lot of them to the coffee shop experience (mostly out of my own lack of experience with applications for jobs)
it makes sense that they'd want a candidate to see and align those things
Generally, with resumes and applications and interviews, you want to display why you're a good fit for the position they're looking to fill. So any questions should be answered in the context of their company and the job position.
Seems like a good learning lesson here. And it's something that can take some effort and it's a skill to hone.

@drowsy knot brewed the Ayla Bombe again today. As a pour over and an espresso.
With RO the pour over was pretty unspecial, some added hardness and it was tasting much better. Not sure if it's "fade" or under development but just found it interesting.

Thanks for the feedback! I’m at the beginning of trying to figure out the diff between fade and under development at this roast level. The mejo ul def seemed to fade pretty fast but also felt under developed to me. I drank all my ayla from that session so fast I didn’t get a chance to see it fade, lol. Did a number of a/b tests with the ayla, basha bekele and kenya tinganga just recently so really looking forward to comparing in the cup. Might have to catch you on a friday and get your thoughts!
definitely could be! Though I’m in NC at my dad’s and he has a bag of my basha roast from early october and the first cup I brewed with his mountain water tasted so faded. Ended up cutting it 1/4 tap and 3/4 distilled and all the fade disappeared. The more I learn the less I feel like I know 🤦♂️

I’ve had similar issues with a few of mine. I found lowering the preheat just a smidge and upping the dev time helped as well. There’s such a fine line between roasty and fruity as always though

Hey @weary chasm , thanks for the samples (was sitting with theavatar at Ondo for the Prodigal tasting). I just got back from NC and had a chance to brew the Ethiopia Yirgacheffe:
1:16.67 | 60gh/30kh water at 98c | Brew Burrs at 575µm | 2:30 tbt
Fragrance - melon and toast, a little roast forward | Aroma - candied apple and tootsie roll
Nice mouthfeel and sweetness, taste of melon and a hint of jammy fruit I can’t identify. Aftertaste that makes me think of light astringency but actually I think is more just roastiness but in the comforting way as it doesn’t dry.
Getting more sweet and round as it cools but having trouble picking out specific notes. A touch on the more developed side and would take steamed milk really well.
Will try the other sample this afternoon or tomorrow!

The Mejo was pretty flat unfortunately. I should have gotten into it earlier, maybe I missed the window on it? It at least didn't taste bad, like roasty or astringent
The UL of the mejo was disappointing and fell off really quickly 😢
But, the light roast is pretty nice! If you make it by Saturday I should have some of that to try 👍
I’m finding shorter roasts with slightly higher drop temps are holding up better
Have you tried microwaving the beans first?
I saw BK was doing something with that but haven’t tried myself. Would have to get a microwave first! I think I’ve always feared underdevelopment going too fast on a drum but I think those fears (at least on my little sf-1) are misplaced. I’m getting fully developed light roasts in ~7min and that includes a low heat soak through turnaround to avoid tipping/scorching. Seems to be working so far and my last round of tests with a/b samples is confirming that shorter is def better in my system when going light. Especially moving faster towards the end.
And I was holding back on the details bc I get too in the weeds, lol!
I truly do love that roaster and there are few “things” that I feel that way about

1:16 | 90gh/45kh water at 92c | Brew Burrs at 500µm | 2:30 tbt
Fragrance - mango/papaya/ripe banana | Aroma - Strong tropical vibes, stewed tropical fruits
Lighter mouthfeel than expected with the strong aroma. Light sweetness with some stronger roast tones. Heavier on the high and low notes but I find I’m wanting something in the mids to tie it together. Def getting a little rounder fruit expression as it cools but still with a sharper cut-off in the finish.
See what you mean about the processing dominating. Strange too because the mid tones are carried more in the aroma and less in the taste. Don’t know the varietal or processing and have almost no experience roasting these types of coffees so my notes are not as informed as I’d like.

Tropical def makes sense! 😂 Have to add that at room temperature the fruits really punch through at first and the body is syrupy thick. Really different experiences at different temperatures

i do feel like rose tea was a more tame tropical.
yeah. i have two versions. one i roasted darker. i'll try that in a bit.

first cup is the panama gesha iridescence from hydrangea, addicting mouthfeel, silky body and a great candied grapefruit/orange blossom sweetness. cant wait to dig into the others

it was a great sampling, and I only have a tiny headache and my ears and sinuses feel "fizzy" thanks to caffeine 😅
it was wild how some roasts were just 1 or 8 seconds longer, and the flavor was totally diff.

Hi LA, Merry Christmas (and happy holidays). I'm in town for a couple weeks in the South Bay (PV Torrance, Redondo area). What do you all consider the best cafes within maybe an hour of the above locations for specialty espresso?
I know a few specialty cafes in those areas. In Redondo: Hi Fi Espresso and Pruvia Coffee Bar. In Torrance, Nook Coffee Bar. I'd probably try Hi Fi Espresso first.
Within an hour of those locations, you have a pretty insane number of options.
Ondo is great
I like Reverent a lot. Offset is good, but more of the traditional specialty medium. Don't expect anything too wild

He sources only lighter, Nordic style roasts. The owner, Jack, is the only barista and runs it with his cousin.
He is particular about everything, down to the water chemistry. He has a particular style of pulling larger shots, dialed a particular way. His shop has no sweetners or sugar, he'll direct you to the next closest shop.
Better than your average shop, not up to some people's taste especially in this Discord. I'd get an espresso, at the least.

You could have a positive experience though. But it’s important to know all outcomes before driving that far.
I had a wonderful experience there when he was open on weekends 🙂 got juicy shot, pulled about to 1:3 of 1:3.5
And in that mall in China town you can find other places. There's a famous Nashville chicken place right in front of it, but there's always a line so I have never been there
😅 old Jack is quite the polarizing figure in the community. I regularly have customers tell me to visit him as he seems like someone who serves coffee similar to my own. Then I hear about the interactions he has with roasters and I get terrified

You should! He has been having Duckrabbit from Ohio a bit more than usual recently which is more developed than Sey, but it still comes out tasty.
