Narrative was a pretty cool shop. Multiroaster. Had a blind cupping monthly to select who they stocked. One in b-ham too. I can’t recall but one closed

Think he just wanted to retire. He talked with me about wanting to move too. He lived in Bainbridge and was tired of the commute and I knew he was toying with the idea of leaving WA. Could be that, but I'm not 100% sure

My name is Josh, and I’m one of the new owners of Elm Coffee. I’m stoked to see so many of y’all care as much about this brand as we do, and we’re excited to be the ones to help cultivate it and keep it thriving!
I’d be curious to hear more about this “inside scoop” you mentioned, as we’re still figuring out a lot of the direction we want to take. Honestly, not much has been set in stone yet, and we’re definitely still in the process of planning. What we do know for sure is that we’re going to continue sourcing great coffee and roasting it with the same care and attention it has been for a decade, improving in areas it needs improving in but all with the intention of respecting and growing the Elm name.
As for the café, we’ve got some ideas in mind, but that’s still in the works – honestly, it’s not even something we’ve shared much about with anyone yet, including Brendan.
If you’d like to chat more about what we’re doing or share your thoughts, I’d be happy to connect! Again, we’re all super excited to get this place open, and hopefully, we’ll see you there soon!

Hey Josh! Sorry for saying anything negative in the first place. I heard some things that made me feel uncomfortable, but I very much don't know the whole story. And I may have been misinformed. As much as I generally gripe about the Seattle coffee scene, I don't particularly like talking bad about any business and am always happy to see new faces in it. Fwiw, I love narrative and make it a point to stop by every time I'm up there. I'd love to chat more and have some questions that I'd love to clear up

Hey Jacob no hard feelings! We knew going into this that there would be some folks that would be confused about the seemingly out of nowhere-ness of this, and might have some questions about this whole thing, and that’s totally fair. My first visit to Elm was back in 2015 after they opened up, and I “grew up” in coffee with Elm being one of those businesses that I looked up to, so I totally know how it feels to have a brand near and dear to you. I’ve seen them come and go, and we’re stoked to keep this one alive.
I’d be more than happy to field any questions both publicly or privately! Also thanks for the kind words about Narrative, I’m a big fan of what you’re doing and can’t wait to see what comes next!

This seems like the group that would have some opinions. If I'm going to be in Seattle for an extended weekend this week, what are some of the shops I should make sure to visit? I'm staying in Cherry Creek, visiting Downtown, have time to travel further out of this area on Sun, and then will be in Bellevue on Mon. I'm an equal opportunity coffee lover- espresso, pour-over, and I do love an excellently textured but potentially bright and funky cortado too.
more modern specialty shops: slowday (mostly pourover focused), homage (medium dank these days), sound and fog (pretty dank)
old-school syrupy espresso: vivace (the definitive article), vita (hit the kexp location for double tourism points), monorail (definitive seattle 90s coffee imo)
other/weird: cardoon (always up to something, interesting milk drinks), voi ca phe (specialty vietnamese style), artly (robot baristas, also allegedly legit human-made pourovers?)
i think only the artly hill7 has human pourover
there's more but i'd say those are the ones likely to serve good/unique coffee
idk if artly actually does pourover as a regular program or if it was a promo thing

If you're into finding local specialty roasters, I would suggest: Olympia (Columbia City has a poursteady and a selection of seasonal drinks, but Downtown is fine), **Hello Em **(Vietnamese-focused specialty, including specialty robusta), Cloud City in Maple Leaf, Milstead in Fremont (multi-roaster often serving Kuma, a local roaster with no cafe), and Kairu (has a stand next to the Sunday Capitol Hill Famer's Market in Cal-Anderson; full disclosure -- we've helped Kyle bring some interesting coffees in)
Go up to Everett and try Narrative 👌🏽
Two more for ya: Ancient Gate in the U District serves local-ish (Bellingham) specialty roasters Makeworth and Mirror (last week they had stuff from Wilton Benitez, Los Nogales, a coffee from Yunnan, etc. on pourover and spro), and Cafe Hagen is a low-key cafe serving their own specialty roasts and decent latte art (they have a location in Bellevue)
If you’re in Bellevue, hit the Cafe Hagen there. It is in the lobby of an office building and it’s a nice setup. Their food selection is interesting and they also have a full bar. So many places seem to use the same food supplier, so it is nice to find something different. Note that parking is not free. 203 Degrees in Totem Lake isn’t bad.
Flora Bakehouse in Beacon Hill has standout pastries (the best croissants I’ve had in the area) and decent coffee. I think they have Olympia Coffee, but I don’t remember. There’s a nice rooftop deck too.
And if you want something completely different, follow @orangegoosecoffee and @openonmostdays on IG. Orange Goose will be more of an option if you don’t get to West Seattle. If you do get to West Seattle, @numacoffeebar is another one to check out. These are all popups, micro businesses, passion projects and really nice people.
Just as a heads up, numa is on pause right now. He just had a baby, so he's on a break. Not sure how long.
But I agree with everything else and would only add Voi Ca Phe in Georgetown. They're a multi roaster that only features vietnamese roasters. Pretty unique even if it's a touch darker than I normally like

Yeah the company name is ridiculous but I’m quite drawn to this grinder, particularly at $100-ish off. But I assume it’ll be tariffed since it ships from China.
I am definitely biased against them because of the silly name and marketing, but I’m cautious of any grinder on its own burr standard

OEM product, direct from Eureka. Was previously Simonelli #15030026, now 15030057. 74 x 37 x 9 mm. Uses M4 x 10 mm screws for the inner burr, and M4 x 8 screws for the outer burr (not included). This is NOT the Nanotec version. Small nicks and dings on the cutting surfaces are absolutely normal and will have 0 effects
sometimes with odd sizes the screw holes can be in the wrong place, etc

Appreciate those who recommended this place. It's walkable down the street from the Children's Museum my kids were playing at. Espresso, milk drinks both were pretty solid. Pastry and food selection for breakfast was even better.

Yeah - basically it is in the food court there. It is open until 9 and there’s lots of seating and ok WiFi so I’ve been known to work from there on occasion

Oh L’experience is also in DT Bellevue and is actually a restaurant. Not had the coffee but the croissants are pretty good.

there are some really wonderful places around here, feel pretty lucky.
but mostly home espresso is the best 😅
Observation: a lot of the independent cafés or local chains seem to source food from the same vendors. So I’m always pleased to find places that have unique offerings. Hagen, Farine and L’Experience are in that category. Mercury’s is too but the less said about them the better 😜
The scene down there is super exciting right now. A lot of shops have popped up since I moved away (granted that was a decade ago) from folks who were just getting their start when I left -- e.g., Be Bright, Endorffeine, Kumquat, Dayglow, Goodboy Bob etc. -- and of course the old haunts like G&B/gget (yeasted waffle in the Grand Central location is chef's kiss), the Sunset Junction Intelligentsia, etc.
and not to forget.. Ondo, and Mandarin Coffee Stand !
and I believe the Intelligencia in Pasadena should be getting a Meticulous Espresso machine, with custom waters, beans, and profiles you can choose.

Yo, just wanted to make a very quick statement. Someone sent me a screenshot of the owner of slow day saying very problematic anti lgbtqia stuff. Not sure who else has seen it (I hadn't until it was sent to me). It's crazy that in this day in age, and in Seattle no less, that this is still happening. I knew he was affiliated with a church, which gave me immediate red flags, but there are good people in the church too.
So I would like to publicly say that I do not share his values. I'm queer. I don't really make this a part of what I do, but I'm bi. Being in a straight relationship (with someone who is also queer lol) makes this not immediately noticeable. But I'm pretty upset about what he said.
He is my landlord and that is all my relationship with him is. I'll be keeping the coffee space for now, but will be limiting my involvement with slow day. Izze from slow day is also queer (but involved in the church). I've asked her thoughts on this as well.
So do what you want with this info (felt like people here would be interested to know this info), but I just wanted it to be clear that my coffee space (and thoughts in general) are not affiliated with Brice

It's weird how intertwined religion and coffee still is. I run into it everywhere. Even in the least religious city in the country
but I agree that people here who are like that are extra loud about it. I grew up in the Ozarks and the red parts of the pnw are scarier than that area sometimes. Just catches me off guard when it's coming from Seattle
Something about the PNW makes it particularly appealing to religious cults and serial killers. One of my closest friends grew up in one of our homegrown apocalyptic Christian cults. God'N'Gunz ain't just for Southerners, apparently.
As an aside, coffee is also the single most popular drug-of-choice with 12-Steppers.

Well after some time to think, here's my general plan:
I'm going to stop sourcing for them or at least heavily limit it. (they do have some coffee that has already been purchased). Don't want my brand to be affiliated with them.
Coffee dungeon will stay as is. If anything, I will be more active. Was planning on capping it at 1x week out of respect for his business and not wanting to compete, but might provide more options for people who don't want to support him. And when my lease is up, I'll run numbers and see if it would make sense to lease a new place. Might be a little less dungeony, but similar coffee ideas
Also, fwiw, none of the baristas agree with him. Izze (manager) is pretty upset

root and elm both went under new ownership that seems less interested in clean/high clarity coffee
sound and fog also just changed hands i think but it doesn’t look like much is changing over there
i think cardoon is new since 23, they serve tim and often have interesting stuff
i think it’s easier to get high-quality coffee in general but much less consistent
jacob is sourcing for a lot of spots though which has raised the level! mostly popups and spots interested in non filter drinks, so it’s a little idiosyncratically distributed around town
i think things are better since 23, but losing root was a blow
I’m going in 3 weeks so maybe I’ll check out Cardoon

I'd also suggest trying Ancient Gate in the U District if you like Makeworth and Mirror Coffee from Bellingham, or their respective sourcing/roasting styles.

Voi ca phe is also fun. I think they opened after 2023. A bit darker roasts normally, but they're a multi roaster that only carries viet roasters which is pretty dope imo

I tend to lean more toward the middle of the spectrum, medium roasts, so they work pretty well for me.
Small haul from the YVR trip - in addition to Yuan some other new cafes are starting to focus on Japanese beans and aesthetics. pretty awesome to have the options 2.5hrs from Seattle

Ended up at Yuan every morning and don’t regret it. I swear the cortados there just make me not enjoy cortados anywhere else.

The bag from Hiyori is a local YVR roaster - he was doing a pop up, one of the best aeropress recipes I’ve ever tasted.
Oh and Union Market in Strathcona a couple times but that was mostly for their amazing Pastel de Nata

Hey folks. New to the server and to home espresso in general. Recently upgraded from a DL semi auto to a midrange pump machine and have been digging learning how to make something decent. Live in Duvall, and work in downtown Bellevue so don't get to Seattle proper very often. Any serviceable roasters on the Eastside as I learn the machine and mechanics? Just got something from Lusso out of convenience and it's fine not amazing. Which is alright since I'm going through beans quick during my trialing phase. Nice to see a local channel here and look forward to learning from ya and chatting. Cheers.

I’ll mention Seattle Coffee Gear again because they have a wide selection of beans that skew medium/dark even if they claim otherwise and that includes some local. You might want to visit Zoka in Kirkland. I think I had the Paladino before but I don’t remember much about it 🙂

They’re in Redmond and roast on prem. They’re not a retail cafe but I think you can go buy beans and they have a whole array of lever machines and I’m pretty sure they’d pull a few shots for you. They have open days this time of year too which are worth checking out.
Hagen is another that has their own roasts. Not sure if they roast or use a facility.
If you haven’t been to the Bellevue location I do enjoy the atmosphere. Great place to work from.
Vita would be another. They seem to be getting into doing more events at the KEXP Events Space downtown.
(All the industry folks are probably wincing because as a consumer I have no idea about any of the employment or sourcing practices at these places so sorry in advance…)

I went to the nearby Zoka yesterday and got the Paladino... I asked them to grind 100g of it for espresso, because I dont have a grinder that can do that fine and I just got a new machine and am not getting enough PSI out of it, but that still didn't work 😦
probably 90% of basic espresso brewing is adjusting your grind size
you can try using a pressurized basket, but espresso without a grinder is gonna be kind of doomed

Keep an eye on Facebook marketplace, craigslist and even Nextdoor (yeah I know…) for people getting rid of grinders. It’s how I got both my machine and grinder.
If I ever upgrade my grinder, I will have a Eureka Mignon that I converted to single dose using their official kit for sale.

I have a eureka mignon that I use normally. I didn't know that there was a conversion kit. What does that do?
Smaller hopper, bellows, the metal blade thing that I use to slow feed (I think the usual setup probably has this) and the catch cup situation. You activate it by pushing the catch cut. It isn’t ideal; I should’ve bypasses the momentary switch and just made it always run and use the power switch to control it but it’s fine.
The big dial is from some Etsy thing. The tilted base is a design I found that I printed.
I brewed this over ice, and it was honestly 🔥
Beans smelled a bit funky, like I expected. The ground coffee smelled pretty rank, I nearly gagged. But something about the iced v60 made a super pleasant drink, nothing discernably robusta/rubber about it
The anaerobic I got from them didn't have any of that rubberiness either; but did have a very strong smell.

My experience of any food festivals in this area has been atrocious. Though I never went to ice cream fest I have ptsd just from reading about it.

I'm a good person, not a battery acid person. Darker velvety chocolatey mouth feel earthy tobacco leather not so much light acid medium... I tend to go for African coffees over Central American

What about Jolly Rancher Italian goo? Lately, my espresso has been tending toward chocolately battery acid. I think I'm getting some channeling.

cool! sounds like vivace is the right coffee for you, they pretty much defined that style in the US. plus they use some home equipment in their shop (the niche grinder) so it’s not like they’re relying on super inaccessible resources

Interesting, I'll give it a go! I was able to use a friend's gaggia espresso grinder to grind a bit of it to see how it went. I used the setting that they had dialed in for their machine and coffee, because I had no frame of reference except it works for them (and I get that its very dependent on their gaggia machine, their coffee and their tastes, so its not going to really work that well), but I figured I could at least try something with a grinder set to an espresso setting to see what happens. I used that just now to pull a shot with the non-pressurized basket. I put 18g in and couldn't get the portafilter on the group head with the puck screen, so I reduced down to 17g and was able to get it on, although I think I could reduce some more... I ended up with 6bars of PSI (wow two more!) and 20 seconds to get 36g out. So an improvement because I am not using the pressurized basket, able to use the puck screen, and taste, bar and shot times are better...
I have a few more things to try: 1. use 16g instead; 2. use more grinds and no puck screen; 3. use the pressurized basket; 4. try my grinder to see what happens (its not a mignon, but a Baratza Encore)
maybe not in that order, because I think 16g with a puck screen will not slow things down or increase the pressure, but probably speed it up
Ok, 18g in: 13 seconds 40g out, not good... and pretty sure its touching the group head.

Posting this on my ig too, but posting a bit more in depth here for anyone interested lol. Theres this new spot in belltown (it's like a 4 min walk from my dungeon) called mixed pantry that is doing pourovers on Sunday highlighting AAPI roasters. Right now their set up is a bit wack and I didn't like the coffee I had that much, but it's interesting! Talked with them about doing some events with them. I've also offered to do qc with them and to help them with sourcing. So something to keep your eye on imo!

Just stopped by daymade kaffa before heading to my dungeon. It's good! I think they're only serving CC and Olympia though. They were out of cc for pourover, so I had a Kenyan drip from olympia. Honestly, probably the best dialed in drip I've had from olympia. Much better than expected 👌

Unpopular but I think Olympia does a solid light roast now and again. I’ve had better luck with their washed South American beans than their natural African ones but for a clean pour over cup I’ve been happy with their bags in a pinch. There used to be a shop in one of the AMZN buildings with a poursteady that was great at keeping my morale up during crap days at AWS
oh, olympia is a totally fine american light roaster imo
I've enjoyed the South American roasts I've had from them for sure. They are certainly one of the better standard offerings you can find around here.

How’re you getting on? Late to the party, but was that Dolce you were dialing in? Vivace Dolce is a weird bean. Try for 1:0.75 or 1:0.8 ratio. Yes, ultra ristretto, in about 25-30 seconds. So, 18g dose would yield you 13-14g output. No, I am not kidding. Also, it prefers some heat (93degC), although YMMV.
Also, flavors out of Dolce can vary wildly roast to roast. Rumor has it that the blend is mostly Monsooned Malabar and it’s a bear to roast consistently.

First brew outta the FRINJ, smells a lot like eugenoides tbh.
Taste is a lot less loud and artificial than eugenoides. Pineapple, florals, and a bit of process. Not bad, but pricey for sure.

). Surrey has lit Indian food. I went to Kerala kitchen. Lots of other good looking spots too. Coquitlam has good korean spots.
In Vancouver proper, I always go to Tina Cake dessert for che. Nammos Estiatorio has some nice upscale Greek food. Yama cafe does a great Japanese breakfast. Lots of good spots lol.

Seattle’s getting better but it’s a very slow process. Too many established owners playing it safe with New American Bistros, though I think a lot of that is to blame on the difficult permit & approval process. Doing businesses “the right way” in Seattle kills a lot of good food spots on the vine
YVR also has a rocking Japanese food scene - Robson is a fun wander for ramen or sushi or Izakaya bites

Yeah the food business is hard on its own. Trying to do something exciting in a town as homogenous as Seattle makes it almost unviably risky (though diversity seems to be improving every year 🤞)
Okay, I may dog on the food scene here, but there's quite a few good places here imo. (I mean I've eaten at like 500 restaurants here lol)
I think the biggest thing holding us back is the high barrier of entry (with both rent and labor costs and also the difficult permitting). I think we have a decent diversity in the food scene, but it could definitely be better. But compare this to Portland, which is a way less diverse city but has a much lower barrier of entry (very business friendly, cheaper rent/labor, etc) and as a result, their food scene feels more diverse than ours. It's also a bit about the general attitude towards food/business in each city, but I really think that these issues are the biggest reason why we are lacking compared to other cities
i wonder if the recent ubiquity of pop ups will drive any innovation in the food scene here

We need popup friendly permitting - I think a lot of the pop ups that happen right now are sort of gray market
Every pop up I know only exists in gray zone of legality (me included). This is a common issue that we talk about. This is mostly coffee, but it's the same with the few food pop ups I've talked to as well
yeah it definitely feels like the field caters to folks that have a lot of extra time and capital to commit to a new venture, which is pretty prohibitive if you're the kind of food business that is trying to appeal to a new / untested market here. A lot of extra risk in an already high risk+low margin industry 🙁
