I can’t remember… Do any of you good people have experience with the DF64 grinders? Contemplating upgrading my Eureka but not sure how much of an upgrade it would be. I know you can get SSP burrs for the DF, but I’d probably stick with the stock burrs to start.

this one isn’t mine but i had a gen 2 for a while, tried a number of burr sets. do you have any specific questions?
Really trying to figure out how much of an improvement it would be with standard burrs over my Eureka Mignon that I’ve converted to single dose (my only other grinder is a 1zpresso K Ultra that I use for pour overs).
i’ve never had a mignon, but I had an Atom 60 with a bellows that was a lot harder to use than the df64.. definitely a lot better options with 64mms. the stock burrs on the df64 were fine, but not way better than the atom. the workflow was way better though, and with the potential to upgrade i’d say it’s a worthy move, at least for me, esp if you can sell the mignon for the same amount as the df costs!

Does anyone have a b75 recipe they like?
my approach with fast flat drippers is to start with coarse grind/5 equal pours, 45 second bloom and then pour when water level is about 1-2 cm above bed. the b75, i've found, is happy from 12-15g dose
then i start dialing with bloom time and pour speed. i don't tend to change anything else unless something's really weird eg. clogging that makes me think about doing weird stuff to manage fines
that's for my palate, the thinking is that heavy agitation tends to accentuate acidity which i find is lacking in flat-bottoms otherwise. in general though the b75 is a really solid normal brewer and any normal recipe should be dialable to taste good
the one thing i have noticed about the b75 in particular is that the ridges don't always interact as intended with filter papers stiffer than kalita. not sure if that matters
I tend to use the april recipe. 1:16 ratio, ~4.8 on the ZP6, and two equal pours. Split the pours 50/50 spiral then center pour. I adjust water temp based on processing. Ridges can sometimes be a litle finicky for sure, but i like mine with sworks filters personally.
12.5g dose is my go to.

Funk in Vancouver. Medium to dark. Quite tasty though as my first of the day.
Timberline was recommended. I had the Habtamu Fikadu Aga Ethiopian as a pourover. Did not enjoy it. At all. Was flat and cardboardy. Pastries seemed nice.
Random food pr0n. Sandwich was US$12 inclusive. That’s a $25 sandwich in Seattle and it was delicious. I would go back just for that at The Bird and the Beets.
Pastry and macchiato was at Nemesis.
I consistently get recommended revolver in Vancouver if that isn’t on Your list yet. Never been
I went last time I was there over the summer. As the name suggests, they have a lot of different roasters. This is what they had at that time. The most interesting experiences that I think this crowd would enjoy were at Yuan and R Ki.
I like revolver, but they can be kinda hit or miss with their selection tbh. Yuan and r ki are definitely my favs too 🙂 need to go back up to Vancouver lol

Never mind. Turns out the 078 is actually smaller than my Eureka, and shorter. Kinda like the look of the Vario VS6 but proprietary burr sets and QA is questionable.

i think probably the best thing about 078 is the non-ssp burrs
similar level of clarity and general good-ness without the harsh dial in experience
they do kind of make everything present the same acidity but i like that profile

the seasoning experience is... weird
i think it was pretty drinkable out of the box but i couldn't really dial in at fine settings somehow, just coarse + high agitation
a year later it's completely brainless and i barely change anything
also the stock hopper sucks
those are the only two glaring qol issues though and they're solvable
The 078 is strictly for pour over from what I’ve heard, but those turbo burrs are god tier

To the SEA-TAC people, how painful is getting around the Tacoma-Puyallap-Edgewood area without a car?
Asking because I'll be in Tacoma early March (13-17) for a 2 day edm event at the Tacoma Dome, and I don't drive 🫠
it’s not great. the streetcar will get you from the dome around downtown, and the bus system is pretty ok, but you mention pullayup and edgewood and those are not real urbanist hotspots
there’s technically regional rail that stops in tacoma and edgewood, but it runs like 3 times a day (less on weekends i think) so don’t expect to use it without careful planning

Does anyone have a Scace yeah I think it is a v5 made in 2021. I opened it to do the PID install but left the OPV alone until I’d pulled some shots through it. Now I’ve pulled some shots and I’m at about 15s for 18g in, ~36-40g out for something like Onyx Geometry, which I would describe as on the medium end of light. I’m grinding about as fine as I can and have tried with both the Eureka and the K-Ultra, so I think the pressure is the next thing to look at.
Maybe I’ll bring it along and we can see if I can get different results with one of the better grinders.
Ok, am a bit confused over the best way to determine pressure on my Silvia. Here is some of the conflicting info I have seen: -250ml per minute from the return pipe is about 9bar (never heard anyone say this is the correct rate for a V3, some say 400ml/min , some say 500ml/min because of the style...

10bar at the group head isn’t crazy high though. May need to still address the grind size or the temperature.

It is TBD… @torn prairie was unable to find the Scace, but it transpires that his is purely a temperature reading one. I have another lead on one though so I’m going to pursue that. I got to try Cyrus’ (not sure who he is on here) Timemore 078S and for the Onyx Geometry that I’ve been using, we found a good setting for a 1:2.5 ratio.

But he wants to do public cuppings and other things like that
i do feel like sey is weirdly challenging sometimes (not always because of roast). i wonder if dialing it in on a shop level is a pita
or if it’s challenging to use as an entry into lighter roasts

When i worked at Sound and Fog, they used to work with sey and always told me how hard they were to work with at a cafe level. So yeah, probably not the best haha. But i would say they're kinda weird to dial in sometimes. Especially compared to other "medium nordic" roasters
He did. And he told me that he wants it to be like that, but with more unique offerings. Talked about a colombian and a peruvian roaster that I'd heard good things about. Seemed open to recommendations from me for roasters to bring on too

She does all the ceramics and they’re really cool. They’ve got some good ideas. Hope they can make a success out of it. Really hope they do some cuppings and we can support them.

Oh yeah, I've had that idea actually. Also there's some pm book clubs that I found that I thought would be fun to serve decaf at. Haven't announced anything, but I'm (in between everything else) meeting with someone next week about a semi permanent pop up space (similar agreement to what numa and driftwood are doing). So I'm setting things up lol. But I have thoughts for pm decaf things.

I haven't tried Woodshop, but I'm a bit south of Seattle these days. Pecos Pit is the only one I've found so far that I actually liked, aside from Pinkies, which no longer exists.
There are a few down here that I haven't tried yet, so maybe one of them might be good. Cedar River BBQ is one I am planning on checking out soon.

Woodshop BBQ is the best I’ve had in Seattle, coming from a Texan who used to frequent Kansas City. Highly recommend
I love Lil Red's; but not for for their BBQ. I go there for the jerk, and especially the curry goat.
I also like the escovich fish. The smoked chicken fettuccine is also amazing, but the sauce is like 90% butterfat, so...
I've been to Jeff's in Marysville and that was pretty good, but I've never had "real" bbq from the south
Yeah, their jerk/curry goat is the best thing they have for sure. But the rib tibs and burnt ends with jerk bbq sauce are pretty legit imo

if you want a neat experience, sightglass does their roasting at the front of the shop which is fun even if the coffee is mid

Echoing what everyone else said with either narrative or homage. No real serious coffee shops though imo. But for the sake of variety, I'd also recommend Sound and Fog (great selection of coffee but they don't really focus on serving it well if that makes sense) and Numa (a popup in driftwood. Look for them on ig not google). I also recommend voi ca phe too. Coffees generally a bit too dark for me, but they source from vietnamese roasters and are at least unique, so I appreciate them for that

vancouver and victoria are pretty loaded with serious coffee shops. revolver, r ki, st. cecilia in victoria, a few more (airworks has a list i think). portland is ok - they kind of stalled a while back but proud mary's reserve menu is still worth visiting for; roseline and heart also good when the stars align
tbh though there's like half a dozen coffee shops in the country that i could say are reliably serving really really good coffee. suited in nyc, thank you thank you in philly, endorffeine in la, now and then in nashville (all very different visions of excellence). root was pretty close to that level but it got bought out and turned into homage, which is still pretty good but not quite up to par. the PNW in general is a little bit overcommitted to the things specialty coffee culture valued circa 2010; we'll get there one day
Adding to @manic portal 's vancouver list: sunny m and yuan are my 2 favorites besides r ki. Modus is solid. Craft cafe is pretty solid too (similar to sound and Fog though). Cowdog and oide (great vibes and drink preparation. Coffee is good). Prototype is a very hipster nerdy coffee place. Their roasting isn't my favorite, but I still stop by every time I'm up there.
Imo vancouver > Victoria > portland > seattle for cafes. But in general the cafe experience in north America as a whole is underwhelming. That's why I mostly just drink coffee at home lol. Still stop by cafes for fun sometimes, just adjust my expectations

BooKoo scale current sitrep. Has been like this for 24 hours. “Hung” while measuring coffee. I think it objected to the metal catch cup I was using. Or maybe not. Who knows. I’m not the only one to have had this happen. The fix? Wait until it runs out of battery (I’d just charged it) or open it and carefully unplug the battery. I’m opting to let it run down to see how much battery life it has 😂

Battery ran out overnight and it recovered after charging. I was on 1.0.7 and have now upgraded to 1.0.9. Presumably that will fix it.

their XO blend was also good if you can find it. it's usually available at met marts reasonably fresh

baristas are really nice there. just beware they sometimes don't have all the beans for sale there
i wouldn't overthink it for buying a roaster's "flagship" blend, the main thing they're trying to do there is consistency. just try a few and see what you like! besides the roasters already mentioned, you might try broadcast, kuma, and elm; i think those are a touch lighter than sightglass

As a forewarning, their sourcing is generally on the more medium side. But I've liked the coffee I've had from Son Pacamara. Soul fine robusta has some fun offerings as well. And last time I was there, I tried some cleaner lots from Bosgaurus that were interesting. Prefer the roasing from son pacamara though.

That would be seriously disappointing. They're one of my favorite coffee shops, and I try to get there the rare occasions I can get into the city.
The coffee they bring in is not my prefered roasting style, but they are easily one of my favorite spots in the city. It's so rare to find a cafe here doing something unique. I've literally been going since their opening day and have gone to all their coffee tastings to talk with them. We planned to do some tastings together too.
I'm offering them advice right now for how they can do it while keeping the cost down. But on top of the tariffs, they told me their roasters are increasing the coffee prices by 25% due to the poor harvests this year and instability in the market. Even without the tariffs, they're struggling to balance it 😭
I think this will impact a lot of the vietnamese roasters in the city too

If I had a fully on brand cafe, it would definitely be neon green. And covered in graffiti tags. But honestly, I think what I do (obscure coffees, pourovers mostly) is a bit too niche to have a full cafe. But I think we'll be a regular pop up soon 🙂
But I have an idea for a cafe that I think would do well here and is adjacent to what I'm doing. Probably won't be neon green though 
I would love to see something like Substance here but I don’t know how it could make business sense on a permanent basis. Just looking around at what people seem to like here (outside of this group), it seems to be 1/ convenience/predictability, 2/ fashionable, Instagrammable milky sweet stuff that has homeopathic amounts of coffee, 3/ “classic” Italian style stuff.
I sent some friends to Homage and they hated it because they wanted classic Italian espresso. I’d be curious to see what Numa serves the most of at his pop up since he seems to cater to a variety of crowds.

the cafe i used to work for had your regular ol’ med-roast-with-malabar blend they used for espresso, and then some lighter specialty offerings on the side

Yeah, the market here isn't ready for a substance style cafe tbh. But I'm in talks for a space that I can utilize at a very affordable rate so I can do some nerdy coffee focused spot. Kinda weird hours, but it'll work. The plan (nothing in writing yet, will be talking more in coming weeks) is to do a few set days where I'm operating as a 'normal' cafe. But it'll only be pourover and drip. Maybe espresso made on flair too, but we'll see. And then 1x a week do a rsvp tasting, cupping or similar event. But that only works as a pop up kinda thing. (Again this is all theoretical until we sign something lol, but it seems very likely currently)
I've talked about it with Seth from numa. He had me over for coffee and we chatted about the coffee scene here and our thoughts on it. He loves what I'm trying to do, but agrees that it wouldn't even really work for what he does. He mostly serves milk based drinks tbh. When I worked at Sound and Fog, maybe 10% of our customers were coffee people. The rest wanted flavored lattes. We did company meetings and where he talked about his goals and whatnot. He flat out said that he relied on people who wanted Starbucks but wanted to support local to make money. The coffee stuff was just for people who were interested, but wasn't how he made money.
I have an idea for a proper cafe that would focus a bit on flavored drinks and whatnot. Attract a certain crowd that'll actually generate money. But also have an interesting coffee program. So I guess kinda similar to sound and Fog, but with sourcing from east Asian roasters. Still planning and don't really have the funding for it, but business is good so that may be the next step I take. Not ready for it yet though lol. Just manifesting this into reality it's guess

Holy crap, Bill! I just tried the eugenoides blend and it was wild! Its like strawberry jam and a bit of wine. The finish is sweet and it's hard to put my finger on the exact note right now, but damn. This was an experience. Thanks for releasing this!

I followed the 4 pour recipe for the UFO with B3 filters and 90ºc water. Drawdown was maybe a tad fast (2:50) at 4.7 on the zp6, but it still tasted great.
Yo! Got some coffee event news for anyone interested! Homage and I are doing a cupping next Monday of my Ilse collab. It's $10, but you get a 20g sample of the coffee for coming. Only a handful of spots available. They're also gonna be selling it as a pourover soonish if you don't wanna cup it lol
Coffea and Company is doing some free cuppings in May too. They're pretty cool if you don't follow them. They're a green buyer club for home roasters/smaller roasters. Haven't been to an event of theirs, but I'm gonna go to one of these!

Hey everyone, newish to this discord and I am moving to Kirkland tomorrow! I was wondering if by chance anyone knows how the water quality for brewing is there. Google tells me super soft water, but thought I’d ask here too.
From what I remember, all the water around here is pretty soft and clean.
Except where the water authority pumps it full of chlorine compounds.
western washington water is generally very soft. kirkland and most of the eastside buy water from the seattle and tacoma water districts; seattle's is about 20 hardness and 20 alkalinity, while tacoma's can be a little harder (and varies more as they use more groundwater) but is going to be much softer than most places in the us
in terms of brewing, i'd say seattle tap is generally great, or good enough that mixing your own water is impractical, but it can occasionally interact badly with some coffees, especially darker roasts
Definitely with the darker roasts. Switching from tap to distilled water made a pretty significant difference for my current daily driver, which is a medium-dark Ethiopia/Tanzania blend.
Still Seattle is surprisingly dark roast focus
i saw an old barista competition article the other day where some guy was complaining about how you can't brew good coffee in seattle because the water is too soft

Can’t give you the scientific answer that @manic portal did but I brought distilled to a meetup and we mixed in half a TWW packet and since then we’ve just been using tap or filtered. I’m in Bellevue and used filtered from my fridge. I brew everything from ultralight to coal.
If you want to do an A/B test, I still have some of the TWW packets and can bring to the next meetup.
Used to work at a specialty coffee shop up in Everett. We have a 3 stage filtration system, 1 sediment and 2 carbon. Water in this area is already pretty much in line with the SCA’s standard for brewing, so we’re pretty lucky.
I’d still recommend at least a sediment and maybe a carbon filter just to pull out any toxins or solids.
I've been doing A/Bs with/without PCW and filtered tap (South Seattle) for Aviary ultralights and can say that you can taste the difference. Extraction percentage doesn't go up by a whole lot, but you can taste the mineral addition and what it tends to bring -- a bit more sweetness and a mild acidity. For me, it makes the ultralights more to my taste as a lover of "expressive and juicy" roasts typically the mid-high 70s Agtron (aka lignite). For those roasts it makes less of a difference to me.
i agree with laurence and just to add to/contextualize my earlier post - there’s a lot of value in water dialing but imo seattle tap is a perfectly good “base” water for pretty much anything light roasted

Thanks everyone for all the answers to my water question! Going to filter it with a Brita and get to brewing when all my coffee stuff arrives. Where I was in Florida had super hard water, so this is a nice change lol.
brita will probably harden it actually. i wouldn't even bother unless you can perceive a problem

yeah, most filters will add tds to water this soft
charcoal particles or whatever, i guess. no big deal but if your filter is adding stuff to pretty clean water, it feels against the point
Anecdotally of course my brita takes my tap from 45 to 25, but that’s really just putting it back to where it should be
mine does the exact opposite lol
anyway it’s good water either way. don’t overthink it is my ideology

They had 4 different coffees from archers. I think they're serving it at slu and cap hill. Had the lerida gesha and it was the best pourover I've had from a shop in a while

It’s insane to me that Starbucks buys these insane lots of coffee and just roasts them to oblivion. You’d think they would have stopped when they stopped showing up to SCA Expo’s and thus sort of separating themselves from specialty.
To be fair, it is lighter in color than the others. On the other hand, that’s not saying much.
i wonder if at sbux scale they have to buy nice coffee to keep a good relationship with producers, the opposite of how specialty buyers might buy ok coffee to support/access nicer lots
