slim shale
#

ah yes good idea

manic portal
#

anybody want to taste through the s&w decaf set, or is that too much (probably mid green) coffee in a row?

slim shale
#

i also got the set so i’m good hahah

slim shale
#

if people are interested in decaf though i do have some hydrangea decaf

fickle nexus
#

I’ve never had decaf

clear iron

manic portal
#

i'm officially throwing up the 🫖 signal

slim shale

manic portal

i'll try and bring mine if nobody else can but it's a hard object to move by hand

exotic horizon

long finch
#

I was just checking the list. Looks like there’s nothing needed? I’ll try to bring snacks. We good for water?

i think we're good!

coarse imp

#

When are we having next meetup, will have ~6 Chinese roasted coffees to share

half badger
#

Just as a heads up, I'll probably be there closer to 1

modern trellis
#

will there be people there around 11? i’ve got a lot to do today but would love to meet folks and try some coffees. i can bring an interesting Yunanese coffee

manic portal
#

historically we start closer to 11:30 but would love to see you there!

fickle nexus
#

I’m setting up now

long finch
#

I’m on my way from Bellevue. Does anyone have a sharpie? I have some ziplocks for samples.

fickle nexus
#

Mine just died:(

long finch
#

I’m outside but I don’t remember the door code

jovial wharf
#

I've got a couple of sharpies i can bring

dawn shadow
#

I'll have to make the next one

clear iron
#

I’ll make another batch of ice cream for @coarse imp wowee

jovial wharf
#

You're now the ice cream man Space! And I'm not mad about it. That was so good

clear iron
#

Who could have predicted that coffee tastes good when combined with milk and sugar

jovial wharf
#

I thought we had to drink it black...

#

Also, great meetup as always everyone! It was nice to meet the new folks and catch up with the regulars. Looking forward to the next one!

fickle nexus
#

I wound up with an extra spritzer! It has a mark on the cap if that sounds familiar to anyone

slim shale
#

that might be mine if it has an N. if it has a star it’s starskys

fickle nexus
slim shale
#

one of these i might not forgot something 😢

ashen siren
#

I know this is a long shot since you guys just had a meetup. But I’m going to be in Seattle tomorrow if anyone wants to meet for coffee wowee

clear iron
#

I shouldn’t have left the September orange drop behind keknervous

long finch
#

It has arrived but as it is my birthday present it will need to wait 11 days.

long finch
#

I can’t remember… Do any of you good people have experience with the DF64 grinders? Contemplating upgrading my Eureka but not sure how much of an upgrade it would be. I know you can get SSP burrs for the DF, but I’d probably stick with the stock burrs to start.

clear iron
#

I have gen 1 with ssp hu, probably not relevant in 2024 though

fickle nexus
long finch
#

We’ll blame the caffeine intake on my memory 😂

#

I looked at the picture I took of the grinder table but I didn’t spot it.

manic portal
#

think it's on the right here. this might be a 64v?

#

pretty good infiltration of the herd of lagoms tbh

long finch
#

I think you’re right! I was expecting it to be black. If the owner sees this can they let me know how they like it?

rancid dome
#

Buy this and throw some steelies in it. Pretty sure it has the forte grind chamber from pictures

#

Meaning you could have a great grinder for like 250. Can hyperalign with a vice clamp. They’re money

modern trellis
long finch
#

Really trying to figure out how much of an improvement it would be with standard burrs over my Eureka Mignon that I’ve converted to single dose (my only other grinder is a 1zpresso K Ultra that I use for pour overs).

modern trellis
#

i’ve never had a mignon, but I had an Atom 60 with a bellows that was a lot harder to use than the df64.. definitely a lot better options with 64mms. the stock burrs on the df64 were fine, but not way better than the atom. the workflow was way better though, and with the potential to upgrade i’d say it’s a worthy move, at least for me, esp if you can sell the mignon for the same amount as the df costs!

long finch
#

Happy holidays to you all.

#

I do have an ultrasonic cleaner I can bring to the next meetup if anyone wants to do this.

icy zodiac
#

I'm thinking of hosting a meetup on the east side (Sammamish) mid-Jan. Anyone interested? There's a freezer full of 40+ coffees, Strada X, Kafatek Monolith Max 2 to kick things off

what day of the week is best? Sunday?

long finch

I would be up for that @icy zodiac I’m in Bellevue but near I-90/405. I’m also happy to take up to 3 people from Seattle potentially.

icy zodiac
#

I may do a meetup Sun, Dec 29 if that works for enough people. Otherwise Sun, Jan 12

long finch
#

I’m tied up until about 2pm on 12/29 unfortunately.

#

Does anyone have a b75 recipe they like?

manic portal
#

my approach with fast flat drippers is to start with coarse grind/5 equal pours, 45 second bloom and then pour when water level is about 1-2 cm above bed. the b75, i've found, is happy from 12-15g dose

#

then i start dialing with bloom time and pour speed. i don't tend to change anything else unless something's really weird eg. clogging that makes me think about doing weird stuff to manage fines

#

that's for my palate, the thinking is that heavy agitation tends to accentuate acidity which i find is lacking in flat-bottoms otherwise. in general though the b75 is a really solid normal brewer and any normal recipe should be dialable to taste good

#

the one thing i have noticed about the b75 in particular is that the ridges don't always interact as intended with filter papers stiffer than kalita. not sure if that matters

jovial wharf
#

I tend to use the april recipe. 1:16 ratio, ~4.8 on the ZP6, and two equal pours. Split the pours 50/50 spiral then center pour. I adjust water temp based on processing. Ridges can sometimes be a litle finicky for sure, but i like mine with sworks filters personally.

#

12.5g dose is my go to.

half badger
#

For anyone interested/available, I'll be doing a popup at Driftwood this Sunday from 4-8pm 🙂 gonna be brewing up Gout, Oasis, Kabuki and Fluid

#

I'll also be doing a tasting at some point this month with Gout, TPC, Substance and Kabuki. I can post some more deets about that when I actually have that planned out lol

half badger
icy zodiac
#

Ok

half badger
#

But I'm planning a coffee tasting for Saturday January 18th for anyone interested 🙂 don't have a time yet, but probably around 11am

long finch
#

In case anyone is interested, I have a free Kalita 155S (small metal one) with filter papers looking for a new home. Can bring it to the next meetup.

long finch
#

I know @icy zodiac had mentioned doing an Eastside meetup on 1/12 at 10am. Did we come up with a date for a Seattle on in January?

icy zodiac
#

Yes confirmed

#

Is there someway I should post it for RSVP and to share the address?

slim shale
#

you guys see homage opened in the old root space?

coarse imp
#

good to see they have similar coffee selection

manic portal
#

i think hannah said they took over all the wholesale accounts

#

somebody try the brewing and report back plz

#

Also, I think I'm going to be doing a free cupping at Elm late jan/early Feb. I'll post here when I have details for that for anyone interested!

long finch

#

I'm creating the event now and will share it shortly

I will need a ride to join this meetupexpresser

icy zodiac

@coarse imp where are you coming from? I can ask

Anyone coming from SLU area who can bring @coarse imp ?

not entirely surprising but that place was actually great.

I got to go to Root once and it was such a pleasant experience. Sad it’s gone but hopeful the next place will do it justice

rancid dome
#

Big thanks to @icy zodiac for hosting today!

icy zodiac
#

@rancid dome my pleasure- look forward to doing it again in February

#

I had too much caffeine

half badger

Looks fun! Sad I missed it @icy zodiac

Definitely will come by for one of the feb ones!

Going to share some Chinese roasts I brought back

im kinda an "old head" and often times say those phrases "I remember when this use to cost ......." or "I remember when "x" was on the shelf for months" etc. lol

But to me outside of the obvious big hitter LE's, its always whats coming out of Wild Turkey ... so russels reserve 13/15 for me

Anyone familiar with roaster Tug 6 up in BC?

long finch
fickle nexus
#

Where is this?

long finch
#

Espressotec in Vancouver BC https://espressotec.com/

Espressotec Sales & Service

Everything coffee for home baristas, coffee enthusiasts, and café owners. Our comprehensive range includes top-of-the-line coffee and espresso machines, grinders, and accessories. We offer service and repair, coffee classes for beginners to experts as well as a unique coffee tasting bar in-store.

#

Cool to visit. They have a bunch of coffees you can sample rather like Seattle Coffee Gear. However, they mostly seem to be medium to dark roast.

long finch
#

Funk in Vancouver. Medium to dark. Quite tasty though as my first of the day.

#

Timberline was recommended. I had the Habtamu Fikadu Aga Ethiopian as a pourover. Did not enjoy it. At all. Was flat and cardboardy. Pastries seemed nice.

#

Random food pr0n. Sandwich was US$12 inclusive. That’s a $25 sandwich in Seattle and it was delicious. I would go back just for that at The Bird and the Beets.

#

Pastry and macchiato was at Nemesis.

rancid dome
#

I consistently get recommended revolver in Vancouver if that isn’t on Your list yet. Never been

long finch
half badger
#

I like revolver, but they can be kinda hit or miss with their selection tbh. Yuan and r ki are definitely my favs too 🙂 need to go back up to Vancouver lol

coarse imp
#

Meetup around 2/8?

fickle nexus
#

Trip to homage?

half badger
#

I'll be doing a cupping at Elm on 2/8, but I'm down for a meetup after or on a different day

#

I can do 2/9 🙂 and i could host if @fickle nexus doesn't want to. Also down with homage, but they're busy on weekends and there's not a lot of seating

sour radish
#

Howdy everyone! Just wanted to introduce myself. Been around this discord for a while but just recently noticed there is a Seattle crew! Would be cool to make it to one of the meet ups soon. I’m a coffee professional with various experience, but still love tasting coffee as much as I did on day one. Hope to see yall around!

fickle nexus
#

I’ll host again in march!

half badger
#

Any interest in 2/9 then? I'm happy to host for one!

#

I'm in Westlake and have a big space for it. Only downsides are that I have to let everyone in myself and there's no bathroom on the floor where I could host it

slim shale
#

fwiw 2/9 is super bowl so unsure if people have plans.

fickle nexus
#

Superb owl

coarse imp
#

I’m okay with 2/9

fickle nexus
#

I have family visiting that weekend so I will likely be busy

half badger
#

I think i have an event I'm putting together for the 15th, but the 16th might work

#

Or we can do a meet up for all fellow non sports fans on the 9th lol

sour radish
#

Can you all let me know how the meetups work? Is this just like a bring coffee to share thing?

slim shale
#

pretty much haha, people will typically bring some brewing equipment (dripper, kettle, scale, spro machine, etc) and a cup and we’ll just try a bunch of coffees

sour radish
#

Oh cool! Sounds fun, I'll try to make it to one of the next meetups.

Lots of available parking in a lot across the street that's free on weekends 🙂 and easyish to get to with transit lol

long finch
#

Anyone have any experience with the Timemore 064S (primarily for espresso but sure why not for pourover)?

fickle nexus
#

That thread is super alive

#

I joined it when I got the 078 and now I can’t ignore it lol

long finch
#

Oh... I didn’t realize it was a thread. Doh. Will check it out. How do you like the 078? I’m worried it’ll be too big for my counter.

Never mind. Turns out the 078 is actually smaller than my Eureka, and shorter. Kinda like the look of the Vario VS6 but proprietary burr sets and QA is questionable.

manic portal
#

i'm a big 78 fan

long finch
#

Did we have one at any of the meetups?

slim shale
#

maybe the november one i think?

manic portal
#

i can see about bringing it to the next one if you want

long finch
#

I’d be interested for sure. If it isn’t too much trouble.

#

I see they have a new one that comes with SSP burrs. And 15% off but the white one is sold out 😦

manic portal
#

i think probably the best thing about 078 is the non-ssp burrs

#

similar level of clarity and general good-ness without the harsh dial in experience

#

they do kind of make everything present the same acidity but i like that profile

long finch
#

Oh that’s really good to know.

manic portal
#

you can find them on the b/s/t here for like 600 relatively easy, presumably from kickstarter backers

long finch
#

I’m watching Aramse’s review and he’s saying 6-7kg to season it(!)

manic portal
#

the seasoning experience is... weird

#

i think it was pretty drinkable out of the box but i couldn't really dial in at fine settings somehow, just coarse + high agitation

#

a year later it's completely brainless and i barely change anything

#

also the stock hopper sucks

#

those are the only two glaring qol issues though and they're solvable

fickle nexus
#

The 078 is strictly for pour over from what I’ve heard, but those turbo burrs are god tier

long finch
#

I meant 078S. You’re absolutely right.

long finch
manic portal
#

oh, i actually don't know anything about the 78s burrs

#

probably a sick grinder with SSPs though

half badger
#

Hey! If anyone's interested in going to my cupping with elm this Saturday, here's a link to rsvp: https://airworkscoffee.com/products/rsvp
Gonna be cupping some of my coffees as well as some Colombians from them. Thought people could just swing by, but they didn't think more than 5 people would show up apparently, so now you have to rsvp 😅

long finch
#

Ugh. Did not realize there was an rsvp

half badger
#

Might be able to squeeze you in if you still wanna go!

long finch
#

But I know it is a small space.

#

To the SEA-TAC people, how painful is getting around the Tacoma-Puyallap-Edgewood area without a car?

Asking because I'll be in Tacoma early March (13-17) for a 2 day edm event at the Tacoma Dome, and I don't drive 🫠

manic portal
#

there’s technically regional rail that stops in tacoma and edgewood, but it runs like 3 times a day (less on weekends i think) so don’t expect to use it without careful planning

silk tundra
#

Ogey, sounds like I'm staying near Downtown Tac then for ease of access.
Thank you for the insight

manic portal
#

yeah if you’re in tac it’ll be ok

long finch
#

Cupping at Elm was a lot of fun!

coarse imp
#

Enjoyed hydrangea af2 natural and that ginger/floral PB

Where is yours and what day should I host on? I’m flexible

#

@half badger

slim shale
long finch
#

Does anyone have a Scace pressure gauge manometer thing? I want to see what pressure my Silvia is putting out because I think it is too high.

slim shale
#

before i’ve measured that in the silvia with the blind basket and measuring rate of water out the opv. there’s some chart on HB i think. Is your silvia the newer one with an adjustable OPV?

#

i think v3+

coarse imp
#

The coffee I want share the most will not get delivered this weekkekcry

#

I have my hs on the way but they are way too fresh to brew

half badger
half badger
#

Anyone interested in me bringing an aiden to the meetup?

manic portal
half badger
#

Okay, I'll bring it! Still haven't messed around too much with it, but happy to bring it!

long finch
# slim shale i think v3+

Does anyone have a Scace yeah I think it is a v5 made in 2021. I opened it to do the PID install but left the OPV alone until I’d pulled some shots through it. Now I’ve pulled some shots and I’m at about 15s for 18g in, ~36-40g out for something like Onyx Geometry, which I would describe as on the medium end of light. I’m grinding about as fine as I can and have tried with both the Eureka and the K-Ultra, so I think the pressure is the next thing to look at.

#

Maybe I’ll bring it along and we can see if I can get different results with one of the better grinders.

#

@half badger Do we need any distilled water?

half badger
#

But I'll have a large brita filter if we just wanna use tap

#

A couple of heads up with my space:

  1. I didn't officially reserve it for this because you need to pay for that. It isn't reserved today and is usually empty. But some people may wonder in.

  2. There's pretty shit service there, so if you're running late, it may take me a bit to get a message to come get you. There's also no real way for me to let you in, so I'll just have to come get you

  3. There's no bathroom on the floor that it's on. So I'll have to let you down to the lobby.

I'll start setting up soonish and will wait outside around 12 to let people in. I also have some takeaway cups and whatnot if you didn't bring your own cups 🙂

i wonder if this is just social media voting or something

#

it's such a weird mix of deep nerd shit and neighborhood joints

coarse imp
#

I’m not even sure half of them are popularehhhh

manic portal
#

like, savaya is a totally regular barely-specialty local chain in tucson. what human being goes there and also to tim wendelboe and counts them both as top 20?

#

no judgement on the place but it's a completely different category of experience

#

it is cool to see so much global representation though

I’ve been to a few of them and was surprised they made it. Also, you had to enter to be considered rather like those “best in show” awards.

i do feel like sey is weirdly challenging sometimes (not always because of roast). i wonder if dialing it in on a shop level is a pita

Echoing what everyone else said with either narrative or homage. No real serious coffee shops though imo. But for the sake of variety, I'd also recommend Sound and Fog (great selection of coffee but they don't really focus on serving it well if that makes sense) and Numa (a popup in driftwood. Look for them on ig not google). I also recommend voi ca phe too. Coffees generally a bit too dark for me, but they source from vietnamese roasters and are at least unique, so I appreciate them for that

Thanks for all the help! This is making a lot of sense. I’m originally out of state and have been confused by what I’ve seen.

Anyone know if Portland would be better coffee destination?

Someone mentioned Vancouver CA?

manic portal
#

vancouver and victoria are pretty loaded with serious coffee shops. revolver, r ki, st. cecilia in victoria, a few more (airworks has a list i think). portland is ok - they kind of stalled a while back but proud mary's reserve menu is still worth visiting for; roseline and heart also good when the stars align

#

tbh though there's like half a dozen coffee shops in the country that i could say are reliably serving really really good coffee. suited in nyc, thank you thank you in philly, endorffeine in la, now and then in nashville (all very different visions of excellence). root was pretty close to that level but it got bought out and turned into homage, which is still pretty good but not quite up to par. the PNW in general is a little bit overcommitted to the things specialty coffee culture valued circa 2010; we'll get there one day

half badger
#

Adding to @manic portal 's vancouver list: sunny m and yuan are my 2 favorites besides r ki. Modus is solid. Craft cafe is pretty solid too (similar to sound and Fog though). Cowdog and oide (great vibes and drink preparation. Coffee is good). Prototype is a very hipster nerdy coffee place. Their roasting isn't my favorite, but I still stop by every time I'm up there.

Imo vancouver > Victoria > portland > seattle for cafes. But in general the cafe experience in north America as a whole is underwhelming. That's why I mostly just drink coffee at home lol. Still stop by cafes for fun sometimes, just adjust my expectations

As a forewarning, their sourcing is generally on the more medium side. But I've liked the coffee I've had from Son Pacamara. Soul fine robusta has some fun offerings as well. And last time I was there, I tried some cleaner lots from Bosgaurus that were interesting. Prefer the roasing from son pacamara though.

#

They usually have some fun coffee on espresso too

native jackal
half badger
# native jackal That would be seriously disappointing. They're one of my favorite coffee shops,...

The coffee they bring in is not my prefered roasting style, but they are easily one of my favorite spots in the city. It's so rare to find a cafe here doing something unique. I've literally been going since their opening day and have gone to all their coffee tastings to talk with them. We planned to do some tastings together too.

I'm offering them advice right now for how they can do it while keeping the cost down. But on top of the tariffs, they told me their roasters are increasing the coffee prices by 25% due to the poor harvests this year and instability in the market. Even without the tariffs, they're struggling to balance it 😭

I think this will impact a lot of the vietnamese roasters in the city too

But I have an idea for a cafe that I think would do well here and is adjacent to what I'm doing. Probably won't be neon green though expresser

#

I would love to see something like Substance here but I don’t know how it could make business sense on a permanent basis. Just looking around at what people seem to like here (outside of this group), it seems to be 1/ convenience/predictability, 2/ fashionable, Instagrammable milky sweet stuff that has homeopathic amounts of coffee, 3/ “classic” Italian style stuff.

I sent some friends to Homage and they hated it because they wanted classic Italian espresso. I’d be curious to see what Numa serves the most of at his pop up since he seems to cater to a variety of crowds.

exotic horizon
#

nah, you would have to have a good amount of “regular” coffee

#

the cafe i used to work for had your regular ol’ med-roast-with-malabar blend they used for espresso, and then some lighter specialty offerings on the side

long finch
half badger
# long finch I would love to see something like Substance here but I don’t know how it could ...

Yeah, the market here isn't ready for a substance style cafe tbh. But I'm in talks for a space that I can utilize at a very affordable rate so I can do some nerdy coffee focused spot. Kinda weird hours, but it'll work. The plan (nothing in writing yet, will be talking more in coming weeks) is to do a few set days where I'm operating as a 'normal' cafe. But it'll only be pourover and drip. Maybe espresso made on flair too, but we'll see. And then 1x a week do a rsvp tasting, cupping or similar event. But that only works as a pop up kinda thing. (Again this is all theoretical until we sign something lol, but it seems very likely currently)

I've talked about it with Seth from numa. He had me over for coffee and we chatted about the coffee scene here and our thoughts on it. He loves what I'm trying to do, but agrees that it wouldn't even really work for what he does. He mostly serves milk based drinks tbh. When I worked at Sound and Fog, maybe 10% of our customers were coffee people. The rest wanted flavored lattes. We did company meetings and where he talked about his goals and whatnot. He flat out said that he relied on people who wanted Starbucks but wanted to support local to make money. The coffee stuff was just for people who were interested, but wasn't how he made money.

#

I have an idea for a proper cafe that would focus a bit on flavored drinks and whatnot. Attract a certain crowd that'll actually generate money. But also have an interesting coffee program. So I guess kinda similar to sound and Fog, but with sourcing from east Asian roasters. Still planning and don't really have the funding for it, but business is good so that may be the next step I take. Not ready for it yet though lol. Just manifesting this into reality it's guess ehhhh

Hey everyone, newish to this discord and I am moving to Kirkland tomorrow! I was wondering if by chance anyone knows how the water quality for brewing is there. Google tells me super soft water, but thought I’d ask here too.

native jackal
#

From what I remember, all the water around here is pretty soft and clean.

#

Except where the water authority pumps it full of chlorine compounds.

manic portal
#

western washington water is generally very soft. kirkland and most of the eastside buy water from the seattle and tacoma water districts; seattle's is about 20 hardness and 20 alkalinity, while tacoma's can be a little harder (and varies more as they use more groundwater) but is going to be much softer than most places in the us

#

in terms of brewing, i'd say seattle tap is generally great, or good enough that mixing your own water is impractical, but it can occasionally interact badly with some coffees, especially darker roasts

native jackal
#

Definitely with the darker roasts. Switching from tap to distilled water made a pretty significant difference for my current daily driver, which is a medium-dark Ethiopia/Tanzania blend.

Used to work at a specialty coffee shop up in Everett. We have a 3 stage filtration system, 1 sediment and 2 carbon. Water in this area is already pretty much in line with the SCA’s standard for brewing, so we’re pretty lucky.
I’d still recommend at least a sediment and maybe a carbon filter just to pull out any toxins or solids.

civic peak
# long finch If you want to do an A/B test, I still have some of the TWW packets and can brin...

I've been doing A/Bs with/without PCW and filtered tap (South Seattle) for Aviary ultralights and can say that you can taste the difference. Extraction percentage doesn't go up by a whole lot, but you can taste the mineral addition and what it tends to bring -- a bit more sweetness and a mild acidity. For me, it makes the ultralights more to my taste as a lover of "expressive and juicy" roasts typically the mid-high 70s Agtron (aka lignite). For those roasts it makes less of a difference to me.

manic portal
#

i agree with laurence and just to add to/contextualize my earlier post - there’s a lot of value in water dialing but imo seattle tap is a perfectly good “base” water for pretty much anything light roasted
