Good to know! I'll have to give them another chance. I did admittedly hate the cafe that was carrying them, so that may have impacted my thoughts on them. It was also 4 years ago. Their set up looks really nice though! I'd definitely stop by to try it out!

Yeah, fill out definitely roasts darker than John small. It's not ultra light, more of a medium-light. Similar to Hydrangea (someone else made that comparison, but i also agree lol. Just not fully taking credit for it!) Excited to hear what you think!

I have a GCP that I was going to do full shades of coffee on but only got around to doing 90% of the flow control- I discovered the hard way I don't enjoy modifying espresso machines LOL.

For sure. My understanding with the Gaggiuino project is that you basically have to undo all the mods 😦

Like I said, I've only done most the flow control (wired it in, didn't mount anything)-probably the easiest mod to remove as it's literally just a potentiometer and anciliaries spliced into power going to the pump.

I could remove it for you, but you might want to leave a wire or 2 from it intact as I presume the Gaggiuno controls voltage to the pump

How are you finding the Gaggiuino? The geekiness of it appeals to me. I’m not sure that is a great reason but it is what it is 🙂

lol so it’s been good but i honestly use it as a loaner machine. I have a spring lever and the shots basically come out the same.

it’s great if you want it to be repeatable and if you want to make small adjustments, but just not really the experience i prefer.

basically if a decent has ever appealed to you the gaggiuino is a great way to figure out if you would actually like living with one

That makes sense- I opted for the Meticulous route, but I ended up ordering the Shades of Coffee parts and a GCP because I got tired of having no espresso machine (my old machine was in a Uhaul that got stolen during a move, long story). Then I didn't finish modding it and still had no espresso machine LOL.

Checked out Golden Hour Coffee Bus in Tacoma this morning. I had the Costa Rica and the Sumatra. Of the two, the Sumatra was my favorite because I am into funky fruity at the moment. Nice chat with Fritz the owner. Because he does farmers markets, all of his coffees are from local roasters.

Hey guys! Solidified which roasters I'll be bringing in for my August drop. Here's what I've got coming in:

For the sub -

1. Terraform (china): Washed rumudamo, ethiopia
2. Bani Beans (Slovakia): Natural Ombligon
3. The Source (Scottland): Mystery coffee. They have a super weird roasting/ordering schedule and don't know what they'll have until like a week before. Definitely odd, but I trust them and like their coffee lol. It'll be some alt process.

Special releases:

Terraform: one of their gesha village lots, the cerro Azul gesha and pepes mejorado
Might also bring in some washed coffee from bani Beans just for variety. I think they have a few ethiopians coming in.

If anyone wants something from any if these roasters that I'm not putting on my site, let me know! I don't have pre-orders up yet, since I'm still doing pre orders for my July drop, but I'll post in here when I do if you wanna snag something I'm bringing in.

They're really good. Not ultralight, but not roasty. Carlb (that's his insta name. Think his name on here is flow something?) compared their roasting to Hydrangea and I'd definitely agree with that

I'm a firm beliver with Asian coffee that roasters from the country it's grown in get better coffee/do better than european/NA roasters who get it. Indonesia is a prime example for me. I hate every indo I've had from an non indonesian (or malaysian) roaster. But I love indos from indonesian/malaysian roasters

That being said, I've never had a good coffee from yunnan, but I want to try the kona too

Yeah, definitely don't think they roast better most of the time (though there are some great roasters out there), but i think they source better green. Noticed it for indo, Vietnam and Thailand.

I've seen some "better" lots from a few roasters. Friedhats pretty regularly has indos. Olivers custom coffee has one right now too. But they all lean pretty hard into the tabac notes and I don't find that in most specialty indo coffees I've had in Indonesia

Storytime: I generally avoid Nextdoor because I loathe it. Every time I look at it, I realize why I dislike it so much. It is the perfect storm of Facebook meets Twitter with people yelling at each other to get off their lawn. However, a friend of mine told me that it can be a good place to find espresso machines. Having been disappointed with Facebook Marketplace and Craigslist, I took my chances. Glad I did because I scored a 2 year old Rancilio Silvia for a song. I was actually looking for a GCP as @distant aurora knows, but this was too good to pass up. I'll be doing the PID mod and perhaps one day the Clever Coffee mod https://clevercoffee.de

For Northern Italian style ristrettos, I think Lusso is my favorite to scratch the trad espresso itch. Love Vivace Dolce but Lusso is far less finicky and more consistently roasted. Lusso Decaf and Ethiopian Guji are in regular rotation for me

-no negotiating the filter for me.
50g bloom for 45 seconds, open the flow rate to about the 4th dot (give or take depending on grind size)
75g pour low kettle height, low agitation circular pour
125g pour high kettle, faster pour
(Last pour may fill up the filter, pulse pour with low agitation to bring up to 250-255)

Yeah, I wanted to say that too. I think that boon boona is actually pan roasting it. But there's like 100 ethiopian restaurants in Seattle and I know of at least 10 that do the coffee ceremony. I know zagol does it for like $20 whereas boon boona was charging $25/pp

Definitely recommend! Parking lot is hella chaotic and they're always playing music so loud that you feel like you're in a club, but it's worth it!

The problem with Ethiopian restaurants around here is that there are sooooooo many, and they're all really good. I've never found a bad one.

I agree with that to a point. There's a lot of them, most are great, but there's a few that definitely stand out. Star coffee and East African Imports (for lunch only!) are the two that stand out to me

Also pricing/portions vary quite a bit from what I've noticed. The 2 most recommended spots, cafe selam and delish ethiopian cuisine, are the most expensive for the smallest portions. Just went to cafe selam and spend $60 for what I'd get from star kitchen for $40. And it wasn't as good tbh. Still good just different

Yeah, some are better than others, but I've never found a bad one. Good at worst, great at best. Prices do vary, but that seems to be based mostly on where they are (in-city prices tend to be higher than farther south).

You should try my take on Boon Boona coffee (the washed yirgacheffe green they sell)-I promise I roast it a lot lighter Also I'm fluid bed, which is my co-preference with stronghold for light roasts. I have delicious minmax to bring (85g of El burro, some old loma geisha, the first washed eth he dropped, and I think an old kenyan), some 6 week sey and subtext eths, and then 3 good brothers (a budget geisha, an equator mejorado, and rumudamo) and S&W's really light Pink Bourbon in my freezer. (I Alos have a bunch of old backlog in my freezer as always lol)

As far as my own roasts go, I have a bunch of underdeveloped washed eths, and an acceptable (I think? I'm biased) Peruvian geisha. I will probably roast more lol.

I'm doing a wee jaunt down from Vancouver to cannon beach, oregon and passing through Portland and Seattle on the way back. I'm looking for recs and normally go for slightly more interesting / infused coffees like some of the DAK diego bermudez or red lotus from hatch if anyone's tried it.

So far on the list, stolen from this thread I have:

Vivace, Milstead, sound and fog, root, Olympia, Heart

Anyone got anything else that's can't miss? I'd love something around cannon beach / astoria too if possible!

sound and fog is by far the most likely to have dak or similar on the menu. cafe hagen also sometimes has weird ferments, though it's a little darker than I'd be enthusiastic about. everybody else around here is either a clean coffee or dark roast vendor. portland will have much more specialty to offer than anywhere else in the region, including here

you'll have to lower any expectations set in vancouver/victoria, I'm afraid

not to be too dire, it's just a bummer. also consider fulcrum and elm as OK roasters and analog as a cafe

Voi ca phe has some interesting coffee occasionally. They source from vietnamese roasters. It's all darker than dak, but it can be interesting. Definitely recommend skipping vivace

I've had decent coffee from sleeper in astoria, but last time I went it wasn't as good. The rest of the coffee scene on the Oregon coast is genuinely terrible haha. Just went down theew a couple of months ago

I've got some (not much anymore) cool beans available if you're looking for beans to buy. Not selling coffee to drink atm though

Lol yeah, I was going to actually. Maybe not an advent calendar per se, but a themed box set for Christmas. I don't have everything set up and the idea I had ended up being too pricey, so I decided to do something different. But honestly I am planning for it next year 🙂

But I will be releasing Substance, Datura and Goût & Co for December (they were a part of the box set I was trying to put together) along with my normal monthly drop 🙂 may also put together a lunar new year box set. Since I mostly work with Asian roasters, I though that would be fun. But we'll see if that ends up happening haha

hell yeah - i wanna try substance again - i went last year, great experience in shop, brought home some bags and couldnt get them to pop - was on mizen burrs and think that was part of the problem.

His coffee is super well dialed in at his shop. But I've really enjoyed the coffee I've made at home from him (admittedly I've only had a few samples to brew at home). Gonna have a super limited amount of coffee available from him. He has very strict limits for how much I can order at a time. So it'll probably sell out fast. But I'll have some saved for popups/meet ups 🙂 and I'll also probably order from him fairly regularly now that we've set this up. Got the same kind of agreement with TPC (but I might get early access to some coffee from him)

damn i saw this too late! yoroshiku is great, i've also been a fan of midnite over thereabouts lately (one of those food-truck-in-the-back-of-a-brewery guys). rondo, ooink, betsutenjin in cap hill also all go-tos. and i like santouka in u village for vegatarian options

i'll have to try kayava! we have a lot of really solid options out here

honestly can't think of any bad ones that have been around more than a few months

I wasn’t a fan of ooink or betsutenjin. I would rather go to menya musashi if you’re gonna be in cap hill, they specialize in dipping style ramen but their other ramen is ok too, better than ooink and betsutenjin imo. I enjoyed the shoyu broth at santouka but the miso was meh. Heard good things about kayava from a friend.

I unfortunately have experienced a lot of underwhelming ramen in the area, enough that i have started a list on Google maps to remind myself where not to go because I’m horrible at remembering restaurant names lol

I loved ooink until they did their rebrand. But mostly for their "fusion" ramen. Its also unironically my favorite malaysian restaurant in the area lol. The Ayam goreng is still great. Midnite is probably my favorite ramen though. Another random ramen rec is my Lil cube in Puyallup. If you're ever down there, it's surprisingly good. All of this being said, ramen isn't my favorite dish so I don't seek it out as much as other ones

We’ve been going to Midnite since they were the food truck by the fish terminal. While the new location is more convenient, because it is all inside, seating can become an issue. I ended up doing the vegan ramen at Ooink, which wasn’t bad but just ok. I’ll have to try Lil Cube at some point. Menya is great though!

Sound and Fog has the best selection. C line makes it pretty easy to get there. Url occasionally has interesting coffee. It's usually from prolog or maru. Voi ca phe has interesting Vietnamese roasters, but Georgetown is kinda a schlep on the bus. I also sell good international roasters, but I wouldn't say they're well known lol. I don't have a physical shop, but I do local deliveries and will be doing pop ups at a handful of places 🙂

Oh yeah, gp occasionally carries cool stuff. But the beans are pretty overpriced imo (used to work there)

But they're a good spot for well known us roasters

December 8th? Color me excited! I will bring my new Lagom 01 with Brew Burrs. I will also roast up a bunch of the cool coffees I have on hand- I have Greenwell Farms Kona, the Peruvian Geisha I brought previously, another Geisha Green I have in the mail, Haitian Blue (Jamacia Blue Mountain grown in Haiti I believe), some columbian pink bourbons, and highlights from a whole bunch of origin sampling I've been doing (like my favorite Mexican coffee ever so far).
