i think i like pb better than gesha, so i'm almost fine with it
i think a lot of roasters put out bad pb
just rely on the bean's intrinsic acidity and don't find good structure
I guess so but ones I had from passenger and Prada were a bit brown too
passenger weird
sey pb from like 21, 22 were incredible
i think it's hard to find good pb because the notes are always the same
mood trap pb was the last good one i had, but that was a lil chocolatey
i'm ok with chocolate if there's big acid to balance it out
guessing you're more about none of that flavor at all if possible?

Fantastic shop! It's inside the brewery. Keyle is his name, guys is super exited about coffee and super knowledgeable. Lots of cool products in stock and delicious coffee. Mostly cleaner naturals and cleaner fermentations. Not as funky as luminous but not many washed option if that's all you drink. (I don't love funk but this was tasty

I think 90+ has become too much for even competition
So, today I opened my 2LB bag of Sey Ricardo Silva Gesha. I quite enjoyed it, but I have this weird issue where I'm a bit sensitive to some types of fermentation (Can't drink natural coffees without big brain fog, for example), and I found I didn't love how I felt after drinking this particular Sey. In retrospect, I probably should have paid more heed to the "Dry-fermented 30 hours" on Sey's website LOL
The upshot of the above is you all are welcome to my Sey gratis- I'd rather it be in the hands of folks that can enjoy it properly.

Hey! I got some samples in from Jiribilla (a Mexican roaster), and they ended up giving me more coffee than I need lol. Anyone wanna try them out? Got 3 coffees (2 from Veracruz and 1 from Oaxaca). The coffee itself is really nice, but the roast isn't my favorite. Definitely darker than I was hoping it'd be. Still good, just dont want to drink all 250g of it and also don't want to waste it.

This month I had a washed caturra from Arnaud Causse roasted by Kaffeelix, a CM honey pacamara from Los Pirineos roasted by Standout and a slow shade natural ethiopian from Niguse Gemeda roasted by wes ngopi. The ethiopian sold out hella fast, but I've still got the other 2! Got some dope roasters lined up for next month too.
Also, if anyone wants me to order them something that I'm not bringing in for my drop from a roaster I'm working with, I can definitely do that. I do that for Julian from coffee reviews. I can post in here too if anyone wants to try something specific
Definitely plan on working with them soon, but they have higher requirements for minimum orders than most of the roasters I'm working with atm. But that's in the works!
But like for next month, I'm bringing in John small roastery (korea), bluebird coffee (South Africa) and Sumo (Ireland). I've got the coffee that I'm gonna order picked out already, but I can buy another coffee if someone wants to try a bag of something else 🙂

I ordered a 2lb bag of washed Danche from them (love Danche, best one i've had was an old Sey), and they upgraded the 250g of Chelchele (also washed ethiopian) i ordered with it to 2lb for free. Only downside is, both were roasted on May 27th so it's probably a bit early days to be opening the bags. I'd probably rather wait till next meet, but if everyone wants some I can open them on Friday night. I also have Diego Bermudez washed pink bourbon from September, roasted the same day.

I have admittedly only had a few coffees from them, but I'd say they're a medium roast. Not too developed or anything though. Similar to father (the roaster from SA not the Czech one lol) if you've had them

Yeah, definitely not turning it to coal thankfully haha. It's $40 for the 250g bag. And when it comes in, we can meet up somewhere. I can do cash, venmo or card. Usually prefer cash or venmo for special request orders, but whatever is easiest
100g bags are $17 from them. And maybe a better description of the roast based on more well known roasters is less developed than the barn, but a bit more developed than Manhattan. Maybe that makes more sense?
That helps- I must confess I was thinking darker than that when I heard medium. I Haven't tried SA father's but I think I saw Sound and Fog selling it. You know what, you sold me on the big bag again LOL. 250 it is.
So many washed geishas are doing extended time in cherry and dry ferments- opposite of what I want. I'm happy to see they're washing faster instead on this one
Yeah, sorry medium can mean different things to different people lol. And the one that sound and Fog carries is the Czech one. They only bring in European roasters. I used to work there, and I drank literally everything we brought in haha.
And yeah, I had this green from another roaster (though for the life of me I can't remember which haha) and I thought it was great. I'm not a huge fan of most dry/extended ferments either
The Czech father roaster is okay. Lots of people liked them, but I never got the hype. The SA father has much better sourcing. Harder to get here though. Super expensive shipping and weird wholesale requirements (you have to order in increments of 7 kilos for some reason)
I tend to be a "the lighter the better" kind of person, but I just bought a Versalab and sold my Brew Burr Zerno, so I'm having to remind myself that my incoming Xbloom, versalab, and probably ever brew burr Pietro will be more flattering of more development haha.
Haha totally agree. I like some more developed roasts, but generally I'm a medium light-ultrs light drinker. The ecuador I brought in from kaffeelix this month was on the more developed medium side, but it was still really good. Admittedly, the sample they gave me was less developed so it caught me off guard a bit, but it was still good. Just have to brew it differently. But yeah, some equipment just works better for more developed coffee too. It's not really the same, but I have a switch that I mess around with and it tends to be better with more developed roasts than with super light roasts
The more unimodal SSP stuff extracts pretty aggressively, which I love for ultra light roasts, but can make life a bit difficult witb more developed stuff in my experience. My versalab on the other hand, makes me work more to hit high extraction without messing up its mix of flavor specificity and smoothness. I really need my Meticulous to arrive so I can start pulling shots on it (lost my old espresso machine to a stolen uhaul during a move)
Funny that we're talking about this, because I've been talking about burrs and grinders all day with people on my Instagram haha. I have the MP SSP, which I think does a great job bringing out clarity in light roasts (for the most part). Definitely works better when you want a higher extraction. Naomi Joe in tacoma has a versalab. I do pop ups with him sometimes and we take turns brewing up stuff for each other. I've definitely noticed that more developed profiles work a lot better with his grinder. I don't mess around with espresso at home, so I don't have as much experience with that in a non commercial setting.
Yep I haven't even tried mine with more developed stuff, but I can already tell it will do better than what I'm used to with SSP MP/Brew.
Yeah, I think the burrs definitely work better for that kinda roast. Definitely wanna play around with more grinders to see which work better for different profiles

As someone who used to work at gp, they usually hate when people take up space for work or anything, so idk if they'd like that lol. The pioneer square location sometimes allows people to reserve a table. Not sure if they're also selling sey though. When I worked there at least they all ran each shop differently and had different beans. But there was a pretty big turnover there, so it may be totally different now 🤷♂️

The Versalab is up and running. I think the Xbloom is what would have done it by compensating for my lack of brewing skills (and lack of time to do it at work- xbloom will be clutch at work).

i'm not usually a fan of washed coffees except geshas so i was very impressed!
I've been really into washed coffees lately, but I still like both. There's a few origins that I only like washed coffees from and rwanda is one of them. I think they're super good (as long as the roaster is good)
My first Xbloom brew was tasty- I still can't get over how well the grinder in it performs. Loaded up Lance's ultralight recepie and threw in that moonwake Layo Terraga I had in pouches straight from the freezer (to be fair, the freezer stock I pulled from is younger), and got my second favorite brew I've ever had of the coffee. I need to dilute the 3rd wave water (classic light roast formulation) I made from the provided packets some more (I tried it at 100ppm but it tasted like that's still too much), but that coffee had no right to taste as good as it did for as little effort as I put into it.
I still have yet to try it with my new Melodrip lift or one of my brewers- not to mention my brew burrs Pietro or Versalab!

Pour over pop-ups sound great. Definitely interested in that. The place I go to most days here on the Eastside is Five Stones. They have a few locations and I’ve befriended some of the staff, one of whom roasts (though they do not currently have their own label).
They're fun to do! I can post here next time I do one if anyone wants to schlep down here lol. I'm also thinking of moving back to the city in Aug/Sept so I'll be looking for spots to do pop ups in Seattle too 🙂
Golden hour coffee bus is also a pourover only pop up happening down here. He only uses WA roasters and they're not my favorite but he brews them well. And there's another one in the works actually. Tacoma is mid, but the coffee scene has potential for sure.
Five stones is decent. I've admittedly only been to the one in eastgate. I thought it was good for the area. There's not really any cafes I love out on the east side. Top notch food scene though, so you win some you lose some I guess lol. Feel free to hit me up for any seattle cafe recs. Ah okay that's funny! So I've been twice and really loved the first shot I had. Told my wife about it and took her there and it wasn't nearly as good. So it makes sense that it's fairly dependent on who's working. Honestly most cafes are like that. Also, it being connected to a church kinda gave me a weird vibe. Not to shit on that in any way, just kinda want a separation of church and coffee haha. It's also been a bit since I've been there, so I may not have had coffee from any of the current employees.
And I just brewed up TPC's Jairo Lopez, and it was awesome! First time trying TPC. can't remember who I got the sample from, but thank you!

Totally agree. I've only had one other coffee that had ginger in the tasting notes, and that one was pretty overwhelming. This one was much nicer. Had more of the earthy sweet notes of a ginger chew

I had this cold washed coffee from finca monteblanco (I think it was pink bourbon?) Roasted by MOK and it tasted like straight sugar cane juice and ginger. Was really intense lol. Not bad, just couldn't drink it more than once a week

I just dropped almost $100 loading up on more super expensive El Parasio Sake from Hatch, I just bought a few pounds of green for my new Roma Pro Air roaster scheduled to arrive this weekend, I'm waiting for my Paypal Echeck to clear with Superbuy to scoop a bunch of Terraform Danche, and I haven't even ordered the Raul Perez geisha I want from September or the Geisha and Pink Bourbon greens I want from The Captian's Coffee. Oh- and I'm about to freeze 4 lbs of Sey (Washed Danche and Chelchele) and 250g of washed Diego Pink Bourbon. This month has been downright ridiculous lol.

My strategy was to buy an air roaster so I can hopefully eventually do ultra light roasts for myself. We'll see how that plays out lol
