I love my MC4 for espresso, and I drink mostly espresso. Now and then I want a filter brew, or guests do. I'm struggling to dial in to something that is kind of sweet and not too bitter. I'm not expecting clarity, and it sounds like these aren't the burrs for that anyway. Most of the time as I grind finer, I go from slightly sour to bitter and astringent with no real sweet spot in the middle.
I've tried a good quality auto drip brewer, a chemex, and an aero press. Best results so far were with aeropress (1:12.5, med fine, 1:30 steep then 30s press). Any recommendations (besides buying a new grinder) to get the best out of the MC4 for those occasional filter brews?
