#Option-O mini, lack of complexity in filter

so I bought the Option-O mini and have been using it for about 2 weeks consistently— the grinds look super uniform and it’s seemingly normal otherwise but I cannot get a good cup of filter out of it. I’m coming from using a Timemore Chestnut X hand grinder which was producing super sweet, balanced cups, interesting from start to finish. everything I’ve brewed with the Option O — V60, kalita, Origami— through a wide range of grind sizes and coffees— has been so incredibly flat. everything looks good during the brew but flavor wise it has a little interest at the beginning and then completely falls off. I feel like I’ve gone through every variable and can’t get more out of it. any suggestions?
