Either your grind is too coarse, or you need to pull a longer ratio shot at that grind size.
The other option is you’re suffering from sour/bitter confusion. But the solution to that is essentially the same. 😅
Are they super light specialty roast? Really light beans almost need that longer ratio ime, quite hard to extract
