#How to set up an 17 pro with a physical SIM without activating an eSIM?

Hi all as the question states i want to set my (soon to arrive) 17 Pro with my physical SIM that i currently have in my 16 pro.

However when my friend (who also has a physical sim and went from a 16 pro max to a 17 pro max) set their's up (using quick start) they got to stage in the set up where it asked if they wanted to transfer their number - they selected the do it later option. The set up continued and finished but there was no network on their 17 pro max. Whenever someone called, their old 16 pro max would ring even though the SIM was in the 17 pro max. They had taken the SIM out of their 16 pro max and put it into their 17 pro max before they began the set up.
We then reset and erased the 17 pro max, went through the quick start set up again - picked the transfer number option, this went through and begain activating an eSIM even though the physical SIM was in the 17 pro max. We panicked and just shut the phone down as we didn't know what to do. My friend went to the Apple Store the next day and asked them and they said that their not much they can do and my friend would just have to continue with the eSIM set up. My friend now has an eSIM even though they didn't want it.
Im trying to avoid this mess when i get my phone and set it up.
Has anyone set up their 17 with a physical SIM using the quick start, if so how did you do it? What steps did you take to avoid setting up an eSIM?

Im based in the UK and the phones come with the Physical SIM tray and the option to use your SIM Card.

If the carrier supports eSIM, it will be used because eSIM is more secure. The physical SIM option is for the remaining carriers that are unable to support eSIM. Check with your carrier to see if they require the eSIM to be used.
