Is Catalina's feature "hide" still available in Sequoia? I do not want my login items to be visible when logging in, i just want it open.

Im running macos 15.5

I don't think that option is there anymore, but you can re-add it using third party tools

I think this was removed for security reasons, and I definitely would not recommend using a third party tool for it.

If you add them to your dock, you should be able to right click on them and choose Hide there.
