Please recommend to me if I which one I should go for (base M1, M1 pro, max, m2...). I mostly do productivity related tasks such as creating excel spreadsheets, documents, web browsing, mail and the occasional light - mid gaming. I would like for my mac mini to last smoothly and without many lags for 5-6+ years if possible. I don't want the expensive option but also not the cheapest. If you need any more info, please let me know...

If you're willing to wait, I would wait for the M3 to come out so you can buy the M2 at a discounted price.
this is the best choice.. i doubt there will be a huge performance jump and the m2 is super fast esp for what you need... i believe even m1 should be ok but m2 is a saferbet for longevity.. m3 prob will make no sense to get

For basic tasks anything more than basic m chip would be overkill. Then if you dont need it urgently wait for m3
