The best way to get souls quickly in Dark Souls 3 is to simply progress the game. Soul gain per enemy scales exponentially with your progress meaning that progressing the game and killing enemies will almost always net more souls than staying in the same area to kill enemies.
The major exception to this is the point at which the Grand Archives become available. Farming the 3 Gertrude's Knights is the most efficient soul farm in the game.

You should continue till you reach ythrill. From there you can get a bonfire after a big lake ish in a church. (no need for bosses in ythrill) Go back and walk right into a sewer. There is like 8 scorpions creatures. 8k everytime. takes 1-2 mins
(you need to defeat deacons of the deep before getting into ythrill)
