When developing in sand box, can I see the data and users as well as the deployed ones?
I know I can see it in the Cognito and Dynamodb management consoles, but I would like to see it in the GUI in the Amplify console if possible.

hey this isnt yet supported on sandbox. But is supported on a deployed branch on the console

you could try using the PR preview feature to create a preview branch on a PR and test the data.
