The potentiometers are good. The board, from what i found, only has one analog pin so youll probably need some kind of io expander if you want to make it work.

yeah, we don't reccomend the 8266, if you want an esp get an esp32, but mainly just get a arduino pro micro, it has enough analog inputs for anything that you would really want to do
