For relevant coursework I would trim it down to maybe like top 3-5 courses
And I would expand projects and have bullet points for it
Also as you get more content you really want to reduce the number of bullet points for the aviation company

if ur bullet points are impact driven they’ll hold more weight as opposed to just saying you made something

Embedded isn’t my speciality so I’m not really qualified to judge how impressive everything is, but I think as reddiwhip said, focus more on what you’ve done
Like pinpoint “I made this specific feature which led to this result”

Yeah don’t feel the need to falsify stuff. I think that it’s fine if you do and a ton do
But moreso like you can say a general sense of how you improved something
Like for example the first bullet point
What does this firmware do in a broad sense
It could be like oh developed firmware for [blank] resulting in better [blank]
