I'm just starting a project with some wiring that would be greatly simplified by one-to-many terminal blocks. I know ther was an Adam Savage video a while back where he raved about one particular style, but I spent about 20min digging around Adafruit, Amazon, McMaster-Carr, and general searches and had a really hard time finding even the right search terms.

(I'm hoping for something more convenient and modular than solder and heat shrink, but I may go that way. The project has a couple of terminal blocks in it already, but I think 5 wires is just over the limit for at least one of them.)

When you have power to distribute or other wires to splice together in a small project wiring harness, what's your go-to?

Something like Wago connectors perhaps? Just beware of some of the cheap clones, as they tend to not be anywhere near as good.

Also make sure it's suitable for the wire you're using.. Some are really only for solid core or low strand count multicore wire. Afaik they come in a number of sizes for different wire diameters too.

WAGO is quick and easy…so nice to work with! They are a little pricy, bit that’s a consideration of you’re using a lot of them, if you’re only using a handful that consideration is negligible. When I do hundreds of connections I use this style instead: https://a.co/d/aqdLw8z

Third the wago.
The indstural terminal din rail blocks are awsome too
