Do you plan to upgrade to latest version i.e 7.xx?
Is it possible for me to upgrade to the lastest version in my plugins without breaking anything in backstage?

The core is moving away from mui entirely and onto https://ui.backstage.io/ instead
You are free to use the designs you prefer, but this is what we're moving to gradually and theming for etc
