Hi! I'm a undergraduate cs student getting into web development. I had an idea for an interactive 3d component on my portfolio website. I don't have prior experience 3d modeling or using 3d assets in web apps.

The hero portion of the page is currently mostly blank, I'm going for a somewhat minimalist and clean design. My idea is to have a small 3d bee model fly around on top of the white background, following the users mouse while they're in that section of the page.

I am wondering if this would be realistic to accomplish in the span of a couple 1-2 weeks if I dedicate a solid amount of time to learning the skills required? And if so, where should I start?

Not sure exactly what you're trying to accomplish in 1-2 weeks. If you mean implement the 3D asset like you're talking about AND build a fully responsive website from the ground up, that sounds like a tall order.
If you just mean the 3D asset part of it, I don't know your level of experience with JavaScript or 3D modeling, but if you have some experience, I think you could probably accomplish that part of it in 1-2 weeks as long as you keep it relatively simple.
#getting-started is where you probably want to start.

How long it's going to take you will depend a lot on how much experience you have with HTML, CSS, and JavaScript.
