Guess the main benefit is getting you a higher quality image for retina devices! So if that matters for you, and for those specific elements of the design (E.g. a big Hero image) then you should definitely do that!
It’s fairly simple. If you want your icon to be eg. 64x64 px that mean that on non-retina devices (like laptops, screens etc) your icon will be seen as 64x64. To be honest I'm not sure why you wouldn't unless file sizes end up being large enough to affect page performance! Hope someone else can chime in!
