I've also tried copying over one file at a time, which ended up freezing my entire file explorer, which I'm 99.9 percent sure shouldn't happen just from wanting to copy some files over,
I was able to make a copy of the config file, by opening it in Notepad++ and saving it onto my internal SSD, so atleast I got that saved

Through a micro SD to USB adapter, I've tried different micro SD cards and those all work perfectly fine, I thought it was the adapter first too but, that wasn't the case sadly
the SD card itself might just be dead, the card is one of these

yeah, likely it's an sd card fault. windows has a repair tool you could try running
