Saving and flying inside the portals doesn't override your back up save, you can go out
Also if you leave the portal your latios wouldn't be gone forever, you can get the scan again

Oh yeah mb I loaded the back up file and now I have the donut back I thought when I saved the game in the dimension I would get back to there

Nothing done in the dimension will overwrite the back up, don't worry.
And as long as you flew somewhere after creating the donut it'll be there too. (If you walk to a portal from Ansha you will lose the donut after back up, this can be useful too)
