You can change the date without closing the game and despawning a shiny tho

I think uncaught shinys only despawn if you fail to catch them and you already exceed the maxinum pending encounters of 10

I know it because I have like 4 shinys in the sewers that I have pending to catch and I been fast traveling in another game with the dates and the 4 of them are still there
