- Scoop a water tile with a bucket (you can skip this step in Creative; you might also need more than one bucket if you plan to build across big bodies of water)
- Set a path tile on the opened land
- Build or place something on the path tile
- Dig up the path tile with your shovel (you can skip this step in creative)
- Fill up the dug tile with water
You can use this trick if you want to place almost anything in the middle of water for aethetics or whatever.
There are 2 limitations:

You can't dig up (step 4) more than 1 tile in a row.
As such, larger items like Fountains or Fire Chalice will only break when you dig up the adjacent tiles. Also doesn't work for non-dryad saplings. The saplings won't grow.
The 3-tile and 2-tile walls in the preview photo is a visual trick: I only dug up the bottom-most path so the other walls won't get broken.

As shown in the 2nd half of the attached clip in this comment, when water-objects* like rocks and hangable items (torches, paintings) are set next to these placements, the tricked items get destroyed.
So set up water-objects BEFORE using the method above to place non-buildables. Otherwise, you will have to redo your work.
* so far only confirmed water (i.e. filling in adjacent land tile with water), rocks, and dryad saplings break stuff -- so this does not include lanterns and other decor like cattails, reeds, water lanterns, etc
