I will start making a website in a few weeks but I'm still not sure what it will be about. Any ideas? Can I still learn something if the website is about something that I like? I will most enjoy making a website about mythology. Will that be a complete waste of time?

If it doesn't matter what the website is about then it's just up to you really
If it's just for the sake of it then the only thing that would count towards wasted time is if you have to do extra research on a topic you don't know just for content that could have been placeholder instead

It's basically for practice but I'd like to include it in my portfolio in a few years when I try to get a job

If it's just for practice I'd reccomend just using placeholder content with a nice theme for images
Unless you want to practice copywriting as well
If you want to theme it around mythology then titles & images should allow you to do that without wasting loads of time messing around with content that has no purpose

why not make a portfolio website?
a portfolio website can only also be a pretty good practice if u look at other portfolios
