Trying to install Linux (or Windows btw) without external media (either USB stick or DVD) is like trying to change car wheel without a lifting jack.
So, unless you really want to grapple with technically acrobatic maneuvers and deal with various problems, i recommend you get an USB stick.

For server purpose, debian is better than ubuntu
debian is server oriented, ubuntu is more casual/desktop oriented
Anyway, if you plan to install several Linux like that, you really better buy a good USB stick
Right Now my laptop that am using to chat with you will be my work laptop will be used for Coding , Playing Games and school work while my old laptop i plan to use it as a server for something

Linux Mint is a good distro to start Linux, however don't expect latest fancy UI things like Hyperland
And Debian is good for servers
Linux Mint is based on Ubuntu, and Ubuntu itself is based on Debian
Debian is the most stable and reliable, not the most "up to date", but the most stable an reliable
perfect for server
Also debian provide minimnal ISO to install it as desktopless server.
Not sure Ubuntu provide that

You can set scale in Display Setting... you may enable fractionnal scalling, but it currently don't work very well (terrible screen tearing). Best solution is to select lowe resolution with same aspect ratio
