the mint download page has different flavors that use different DEs. I would check those out and pick whichever one you like the most.

propably depends on what you want to have specifically and what you like, perhaps out them all? you can make a fedora install and in the installer select every desktop you want to try

If you want something similar to Cinnamon but with more features then I recommend KDE Plasma, if you want to try something entirely different then Gnome, and definitely go for Fedora when trying desktops because it has pretty much all of them
