u can switch the start menu by right clicking it, n choosing Alternatives, and pick the fullscreen launcher

though not sure how a right click works on touchscreen, maybe long press? or add a mouse via usb

you can dnf group install plasma-desktop if you want to use regular plasma

you should be able to switch easily

between the two
