usually a 4-8 gig stick is recommended.
as for partition size, depends on how much you have to spare. back when I dual booted around 20-30 gigs were enough, just to get a taste for it.

USB flash drives are so cheap I would recommend getting a 64GB so it's big enough to be useful for other purposes as well.

and turn windows fast startup on versions of windows 8 and above before attempting to install a second OS
I'd recommend a bootable usb-maker like ventoy from ventoy,net or UUI from pendrivelinux.com as they're both reliable and dont block further use of usb storage space
