I found a solution. For future people, you need to go into the recovery mode, click boot normally, then open the terminal and type sudo nano /etc/default/grub and edit the line "GRUB_CMDLINE_LINUX_DEFAULT="quiet splash" " to be GRUB_CMDLINE_LINUX_DEFAULT="quiet splash nomodeset" (adding nomodeset) this fixes the error and lets you proceed to default loading.
"save" in nano editor = ctrl+O

press Escape key or hold shift key about 3 seconds after reboot, after the BIOS splash, and just before Mint gets a chance to even start.
then go to advanced
press e for edit.
and add nomodeset to the startup commands.
No matter what I do regardless of if I do shift or esc it won't change
I managed to get to it previously somehow

I think I finally found it
I suppose the 2nd last option . for shell.
I hit the normal boot like you mentioned previously and it took me to the log in
The normal one and it even let me log in, I'm back to normal now by the looks of it!
