is it generally stable to use a samsung 870 evo with a sata to usb a adapter to make it portable with mate loaded? i want to use this as a portable "pc" that needs a "host" so i can travel with my own data and os, my question is that is it practical and stable enough to achieve this? since ill be connecting this "external" ssd to several computers/pcs (dont ask why), my main concern are the drivers that ill have to update/switch over and over again.

That should work. You may want to try installing it while it is connected via USB, so it learns these file paths permanently - just to make sure, I am not actually sure it makes a difference. But I recommend you put it into a proper USB case and don't just let it dangle from an adapter.

I am not sure if a Mint install cares, but I know Windows 10 don't like being booted that way

ya it's fine. get a decent aluminum case enclosure for decent temperatures. if the other pc's are friendly to booting via USB/ foreign OS's then all good.it either works or it doesn't.
