I think the shim is the boot loader needed for Secure Boot support. You might try with Secure Boot disabled in BIOS/UEFI.

I am not familiar with the issue, but a quick search yielded a thread on Ubuntu (Mint's mother distribution) where it was recommended to also disable Fast Boot and set OS to "Other" (as opposed to Windows).

Sorry for the delay, the solution was simply to turn off Secure Boot and then boot directly into the Live session

If you let it reboot, Secure Boot will turn back on seemingly

#
