#Linux machine running as a plex server suddenly not working properly

This is my first time using linux. I setup a plex server on a old laptop, with qbittorrent, prowlarr, sonarr, radarr and bazarr (all of which took like 10-20 hours to set up), and samba to access the files on my windows system too. Everything was working flawlessly. Then i unplugged the main usb drive I use for storing media, plugged it into my windows machine, copied some videos on it, plugged it back into my linux (which was turned off during this), and suddenly almost nothing is working properly.

Qbittorrent downloads files for a few seconds when booting the laptop, then all of the downloads stop, I can just about access the plex server on other machines (takes forever to load), but it doesn't play anything, claiming the system is not powerful enough to show the video (which worked fine before), I can't access the files through samba anymore on my windows pc, I can't open the remote web uis for sonarr, radarr, or prowlarr. I can open and play all the files on the server laptop itself just fine, even access the plex server locally. I thought that the problem could be that my storage was using NTFS file system, so I reformatted it to exFAT, but that didn't help at all. When the issues happen, basic system things also stop working, like closing qbittorrent, or turning off the pc through the power menu (or it might turn off but like a minute later), I have to turn it off by holding down the power button.

My suspicion is that something is using all the little processing power of the pc somewhere, and preventing any normal functionality or disk access, how can I troubleshoot this?

Okay wtf, now it's out of nowhere working normally again, after not working for a long time even after several restarts???

Plex had not updated some metadata, I set it to update them, and now it's back to not working at all 😕
